OCHAZUKE (TEA & SALMON RICE)

I made this version from The Complete Book of Japanese Cooking. Also, I did not have tea leaves so I used tea bags instead.

Ochazuke (Tea & Salmon Rice) image

Steps:

  • Thoroughly salt salmon, and set aside for 20-30 minutes. Rinse off salt. Grill salmon for approximately 5 minutes. When done flake with a fork.
  • Cut nori into 1/2 inch strips.
  • Boil 2 1/2 cups of water, and allow to cool. Add tea bags, and let steep for 1-3 minutes.
  • Divide rice into 4 bowls. Place a fourth of salmon in each bowl. Drizzle 1 tsp of soy sauce in each bowl, along with 1/4 tsp of wasabi, if using. Garnish with nori strips.

  • Preheat oven to 425ºF (218ºC). For a convection oven, reduce cooking temperature by 25ºF (15ºC). Bake the salted salmon fillet (Shiojake) for 20-25 minutes until the skin and flesh are blistering and charred (Japanese salted salmon is always cooked till firm). If you’re using regular salmon, season the salmon with salt and set aside for 10 minutes before baking. When it’s cooked, remove the skin and bones and break up the salmon flesh into flakes. Set aside.
  • Ochazuke with Dashi: Combine all the ingredients in a small saucepan and bring it to a boil. Pour the soup into a small teapot.

  • Bring 2 cups water to a boil in a teapot or small saucepan over high; remove from heat. Add tea bags and 1/4 teaspoon salt. Cover and steep 2 to 3 minutes.
  • Divide rice and salmon evenly between 2 bowls. Remove and discard tea bags; pour tea around salmon and rice. Sprinkle evenly with remaining 1/4 teaspoon salt. Serve with desired toppings.

  • Scoop ½ cup rice onto a clean surface. Dampen your hands in a small bowl of salted water (this will prevent the rice from sticking to them and season them slightly). Firmly compress rice into a tight ball, then press down on surface to gently flatten to a 2½–3" round. Repeat with remaining rice to form 4 rice cakes.
  • Heat oil in a large skillet, preferably nonstick, over medium-high. Brush one side of rice cakes with soy sauce. Cook, soy sauce side down, until edges are golden brown and crisp, 5–6 minutes. Brush tops of rice cakes with soy sauce. Turn and cook remaining side until golden brown and crisp, another 5–6 minutes. Remove from heat.
  • Meanwhile, pour water into a large saucepan to a depth of 2". Bring to a boil, then reduce heat so water is at a gentle simmer. Crack an egg into a small bowl, then gently slide egg into simmering water. Repeat with remaining eggs, waiting until whites of eggs in water are opaque before adding the next (about 30 seconds apart). Poach, shaping with a slotted spoon if needed, until whites are set but yolks are still runny, about 3 minutes. Using slotted spoon, transfer eggs to paper towels as they are done.
