OIL-LESS FRIED TURKEY

The "unfried" turkey cooked in an oil-less fryer comes out tender and juicy on the inside with a deliciously crisp skin. We recommend injecting the turkey to really get flavor into the meat. The cooking process seals in all the flavor and moisture. The outcome is very close to a fried turkey without actually frying the turkey....

Oil-Less Fried Turkey image

Steps:

  • 1. Completely wash the turkey inside and out. Remove giblet bag and neck bone of course. Do not discard. Use for your dressing and or gravy.
  • 2. Pat dry.
  • 3. Rub the olive oil on inside and outside of the bird. Coat the bird with your favorite rub recipe or just salt and pepper. You can also brine the bird with your favorite brine. But still pat dry and rub with olive oil liberally.
  • 4. Inject your favorite poultry marinade.
  • 5. After injecting refrigerate for 4 hours or overnight (overnight is best).
  • 6. No preheating is needed for the oil less deep fryer. Follow instructions. Purchase a remote thermometer follow instructions place bird in the basket provided lower into the cooking unit turn it on and wait for your thermometer to beep or buzz.
  • 7. Cover fryer for 15 to 20 mins with lid provided to perfectly brown and crisp the skin.
  • 8. Remove, rest bird for 15 to 30 minutes.
  • 9. Carve and enjoy with your next holiday feast.

This is an awesome rub for your deep fried turkey. Can also be used on chickens...just be sure to marinate in the fridge for at least 24 hrs for the best flavor. 2 days is optimal. Enjoy!!

Deep Fried Turkey Rub image

Steps:

  • In a small bowl, mix together the bay leaves, thyme, oregano, pepper, garlic powder and Creole seasoning. Rub onto a turkey and refrigerate for 24 hours before frying according to your favorite recipe.

Steps:

  • If you have a frozen turkey, thaw, rinse and pat turkey dry with paper towels. Rub outside of turkey liberally with EVOO. Inject turkey with marinade and place in infa-red turkey fryer. NO oil needed. Cook for 10 minutes per pound or by your fryer's instructions. Remove from fryer and let rest in cage container for 30 minutes. Carve as you prefer. Enjoy, as it is one of the most moist and flavorful turkeys you will ever eat. NOTE: If you want to brine your turkey before cooking, that's fine, too.

  • Discard any plastic ties or plastic pop-up timers from turkey. To prepare the injection marinade, whisk together the hot water, salt, maple syrup and liquid smoke, until salt dissolves. Add in ice cubes to cool. Inject the turkey in several places, without puncturing the skin.
  • Rub cooking basket with cooking oil. Brush cooking oil all over skin of turkey. Season turkey with dry rub, inside and out. Insert turkey into basket, with breast side up. Turn on Big Easy, make sure the flame is strong, and cooking pot is heating up.
  • Lower in the turkey in the basket. Cook, uncovered, about 9-10 minutes per pound. During last 15 minutes of cooking, cover with the wire mesh lid to allow turkey to brown. The breast should register 150F-155F. Remove turkey and let rest for 15 minutes before removing from basket. **While turkey is cooking, make gravy.
  • While the turkey is cooking, make the gravy. In a large sauce pan, heat the cooking oil over high heat. When hot, add in the turkey neck and gizzards. Brown the turkey on one side, then flip. Add in the onion and garlic cloves and continue to cook until onions are softened, and the turkey is nicely browned. Pour in the stock, add in the fresh thyme and bay leaves. When boiling, turn heat to low, simmer for 30 minutes. Strain, discarding solids. You should have about 2 1/2 cups turkey stock.
