Steps:
- Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
- In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
- Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.

EASY CARAMEL POPCORN
This is habit-forming, it is soooo good and so simple to make, you can also use unskinned almonds or use whatever nut you desire --- you may also add 1/3 cup molasses for a stronger caramel flavor :)

Steps:
- Set oven to 250 degrees F.
- Put the popped corn in a large bowl.
- Melt the margarine (or butter) stir in brown sugar, corn syrup and salt; bring to a boil, stirring constantly.
- Then boil for 5 minutes WITHOUT stirring (this is important DO NOT stir for 5 minutes!).
- Remove from heat and stir in baking soda and vanilla.
- Add in the nuts and stir to combine.
- Pour the mixture over popped corn in bowl; mix well with a wooden spoon to combine.
- Transfer to a large greased roasting pan, and bake for 1 hour, stirring every 10-15 minutes.
- Remove from oven then cool.
- Break into pieces.
- Store in a tightly covered tin box.
- Delicious!
FAST AND EASY CARAMEL POPCORN
This recipe is sure to be a hit with friends and family. It's super easy and there's not much of a mess to clean up afterwards. My kids love watching the mixture foam after adding the baking soda. We all start eating it right away but I do prefer it after it has had time to cool. It's a real treasure to create! P.S. You might want to break it up with your hands as it starts to cool.

- Place popped corn in brown bag.
- Melt margarine, brown sugar and syrup in microwave on high for 5 min stirring once every 1/2 minute
- Stir in baking soda, mixture will foam!
- Pour over popcorn in bag and shake well.
- Place in microwave on high for 1 inches Shake again, heat for one more minute.
- Shake, pour into bowl to cool and then enjoy!

These old-fashioned Halloween treats are surprisingly easy to make and oh so yummy! The shown weight of the popcorn pkg is a guess, just use standard size pkg's.

- Pop corn in the microwave using package's directions one bag at a time, removing any unpopped kernels.
- popped corn in warm (not hot) oven to keep warm and set aside.
- In a medium saucepan with a candy thermometer inserted, combine butter, sugar, and corn syrup.
- Stir well and bring to boiling over medium heat.
- Stir in condensed milk; simmer, stirring constantly, until thermometer reads 238 degrees F (114 degrees C).
- Stir in vanilla.
- Pour caramel over popped corn and stir to coat.
- Butter hands lightly; shape popcorn into balls about 3 1/2 inches in diameter.

OLD FASHIONED CARAMEL POPCORN IN THE MICROWAVE!
My mother used to make caramel popcorn for us kids on special occasions, except she made it in the oven and it took FOREVER! This replicates the old fashioned hardened caramel coated popcorn. She got her first Amana "Radarange" and this recipe from a lady named Pat Tyner at church and our lives were forever changed... yummy caramel popcorn that was easy for mom and no waiting for us impatient, whiny kids. We've been making this recipe for many, MANY years. Posting the original recipe for safe keeping. I've added a few updates... feel free to do the same!

Steps:
- Pop popcorn. (Update: 2- 3.5 oz bags popped microwave popcorn can be substituted, approximately same volume).
- Put popped popcorn in a large, brown paper grocery bag.
- Stovetop: Add syrup, sugar and butter to a pan and bring to a boil for two minutes. (Update: In a microwave safe bowl, nuke until ingredients are melted and bubbly, 3-5 minutes.).
- Add vanilla and baking powder and stir briefly.
- While foaming, quickly pour caramel into the brown bag, over the popped popcorn. Roll the top of the bag together until closed and shake well.
- Place brown bag into the microwave and nuke 45 seconds.
- Remove bag from the microwave and shake well. Do not open the bag.
- Repeat steps: nuke for 45 seconds, remove, shake well, 3 more times.
- Nuke again for 30 seconds, remove, shake well and pour onto baking sheets to cool. Toss the bag.
- Caramel will harden as it cools, break apart and enjoy!

OLD FASHIONED CARAMEL POPCORN
This is so yummy, an old family recipe. I use it at christmas as gifts. I place it in old but decorated coffee tins and give it to teachers and bus drivers as gifts, not to mention my Mom, brother and Grandma who wait for it. My kids love this stuff and it makes a great Friday night movie treat it you want to try something different. You can add nuts, but I never do!!

Steps:
- In a saucepan mix butter brown sugar, corn syrup and vanilla and bring to a boil.
- Boil for 5 to 6 minutes stirring occasionally.
- Remove from the heat and stir in the baking soda until the mixture has puffed up.
- Allow 1 minute to rest.
- Placed popped popcorn in a large baking dish.
- (I use my very large turkey roasting pan without the lid.) Pour mixture over popcorn and stir until well coated.
- Bake at 300 degrees for 10 minutes.
- Stir well to make sure the bottom doesn't burn, Bake for another 10 minutes.
- Pour onto a large surface to cool.
- (I cut a green garbage bag in half and cover my dining room table with it before pouring out the popcorn onto it. It saves on clean up.) Break apart to serve.

- Melt butter in large pot; stir in brown sugar, corn syrup and salt.
- Bring to a boil stirring constantly. Continue to boil for 5 minutes WITHOUT stirring.
- While boiling - place popped corn in 2 extra-large shallow baking pans.
- Set aside.
- Remove butter and sugar mixture from heat and stir in baking soda, vanilla & caramel flavorings.
- Pour over popped corn and stir well to coat.
- Bake in 250F oven for 1 hour; stir every 15 minutes.
- Preparation & cooking time does not include popping the corn.

HOMEMADE CARAMEL POPCORN RECIPE
Sweet and gooey, this homemade caramel popcorn recipe is an old family favorite.

- Pop your popcorn in an air popper machine. My machine only allows 1/2 cup of kernels at a time so I had two separate batches that I had to pop.
- Cook the brown sugar, Karo syrup, and 1/2 cup of butter over the stove on medium high heat and bring to a boil.
- Add the sweetened condensed milk. Stir continually for about 3 to 4 minutes until it gets to the soft ball stage (it clings together when you drop some in cold water). It will burn if you cook it too long, so make sure you are stirring continuously and watch it closely.
- When it is finished cooking, take your pan off the stove and pour the caramel sauce over your air popped popcorn. Mix until all the popcorn is completely coated. You will need a very large bowl to mix it all together.

OLD FASHIONED MOLASSES "CARAMEL" CORN
Back in the day, down South, cooks didn't have corn syrup on their shelves, they had sorghum molasses as it was cheaply and locally produced. It's an old fashioned taste I love and candy made w/ molasses is far more flavorful than candy made w/ corn syrup. My Granny cooked her candy till 'hard crack' on the stovetop and poured it over the corn, but doing it that way takes a lot more babysitting and using this method you won't burn or undercook it because it hardens in the oven.

- Pre-heat oven to 250 deg.
- Place butter in a medium pot, on medium heat.
- While the butter's melting, pop the corn and put it in a large roasting pan. I used a disposable aluminum pan and a hot air popper (you won't need to butter the pan).
- Keep an eye on the butter and add the sugar, molasses, and salt to it as soon as its melted.
- Bring the candy to a boil and stir and cook it only till the sugar melts and the butter blends in entirely - just a couple minutes.
- Turn off the heat and stir the vanilla and peanuts into the candy.
- Quickly add the baking soda and stir untill it's well mixed. It foams to make a lighter, more delicate candy.
- Pour the candy over the popcorn and toss untill it's evenly coated.
- Put the popcorn in the oven for 1 hour, tossing every 15 or 20 minutes.
- Let it cool completely before breaking up and putting into an airtight container.
- I developed this recipe by hacking others because I couldn't find another to suit me. I made this for Christmas treats and it was INHALED, you'll find it tastes like Cracker Jack; that candy is made with molasses, not corn syrup, I got a box yersterday to compare.
- You can easily double this, but double the baking time too.

Steps:
- Combine butter, brown sugar, and corn syrup.
- Stir well and bring to a boil over medium heat.
- Stir in condensed milk.
- Simmer, stirring constantly, until the mixture forms a soft ball in cold water (takes just a few minutes). It will be between 234-238 degrees farenheit on a candy thermometer.
- Stir in vanilla and remove from heat.
- Pour over the popped popcorn and stir well.
- Butter your hands lightly, and shape the popcorn into balls about 3 1/2 inches in diameter.
- Makes about 15 balls.
