This has been one of my favorite side dishes. Make it a meal by adding leftover ham or some smoked sausage.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Prepare the elbow macaroni according to package directions.
- Meanwhile, melt the butter in a small saucepan over medium high heat. Stir in the flour until a cream colored paste forms. Then pour in the milk and stir constantly until this comes to a hard boil, then stir for 1 more minute. Remove from heat and set aside.
- When the macaroni is cooked, spread 1/2 of it into the bottom of a lightly greased 9x13-inch baking dish. Then layer 1/2 of the grated onion, 1/2 of the salt and pepper and 1/2 of each of the cheeses. Repeat this one more time: macaroni, onion, salt and pepper and cheeses, and then pour the reserved white sauce over all. Top off with small pats of butter to taste.
- Cover and bake at 350 degrees F (175 degrees C) for 45 minutes.

- Cook macaroni in boiling water until almost tender; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, salt, mustard, pepper and pepper sauce until smooth. - Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions. Reserve 1 cup cooking water, then drain.
- Melt the butter in the same pot over medium heat. Whisk in the flour, mustard powder and paprika; cook, whisking constantly, until smooth and slightly darker, about 1 minute. Slowly whisk in the milk and continue to cook, whisking occasionally, until the sauce thickens slightly and comes to a simmer, 7 to 8 minutes. - Preheat oven to 400 degrees F (200 degrees C).
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta is cooked through but still slightly firm, about 8 minutes. Drain well.
- Melt 1/4 cup butter in a large saucepan over medium heat. When the butter starts to foam and bubble, stir in the flour; cook on medium heat until flour just begins to turn pale yellow, 3 to 4 minutes. Add thyme, cayenne pepper, and white pepper; cook and stir another minute, then whisk in 1 cup of milk until smooth. Pour in remaining milk and whisk again. Bring the sauce just to a simmer.
- Stir in nutmeg, Worcestershire sauce, and salt; simmer on medium-low heat until thickened, about 8 minutes, whisking often. Turn heat off, then add 2 1/4 cups of Cheddar cheese; stir until melted and combined. Add Dijon mustard.
- Transfer the macaroni into a casserole dish, then pour in the cheese sauce; stir to thoroughly combine sauce with pasta. Mix panko bread crumbs and 1 tablespoon melted butter in a small bowl, and sprinkle crumbs on top of macaroni and cheese. Sprinkle remaining 3/4 cup of Cheddar cheese on top.
- Bake in the preheated oven until bread crumbs and Cheddar cheese topping are golden brown, about 20 minutes.

OLD SCHOOL MAC N' CHEESE
This is a completely unpretentious, down-home macaroni and cheese recipe just like my grandma and mom always made. A simple white sauce where you add cheese and a few other flavors with macaroni and a potato chip crust. This recipe makes a lot, I like to make two pans so I can take one to a pot luck and have the other one to keep in the fridge for later. It's an easy recipe to adjust down if you only want to make one pan. If you aren't cooking it right away, just keep the topping separate until you are ready to put it in the oven.

- Preheat oven to 375 degrees F (190 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain.
- Melt butter in a large pot over medium-low heat. Slowly add flour to butter, whisking constantly; cook until brown and the mixture no longer smells of flour, about 5 minutes. Add about half the package of shredded Cheddar cheese; stir continually until the cheese melts completely. Repeat with remaining half package of Cheddar cheese and the American cheese, about 4 ounces at a time. Once cheese is entirely incorporated, remove sauce from heat.
- Stir drained macaroni into the cheese sauce to coat. Divide macaroni between two 9x13-inch baking dishes.
- Mix crushed potato chips, 1 cup shredded Cheddar cheese, and Parmesan cheese in a bowl. Top the macaroni with the potato chip mixture evenly. Spray the potato chip mixture with cooking spray.
- Bake in preheated oven until the crust is golden brown and the sauce is bubbling, 35 to 45 minutes.

- Cook macaroni according to package directions.
- Drain.
- Immediately place cooked macaroni into large bowl.
- While still hot, stir in the butter, the cubed cheddar, and the handful of grated cheddar.
- Mix well for one minute.
- Add the eggs and the can of cheddar soup.
- Mix through.
- Season liberally with Lawry's salt and pepper.
- Mix through.
- At this point, I like to give it a taste (I know, I know, raw eggs, but I live dangerously), to test for seasoning.
- Adjust seasoning as needed.
- Add the milk and mix again.
- Place mixture into a mid-size casserole.
- I use an 11x8x3 or so.
- Don't use a dish too deep or browning will be a pain.
- Spread evenly.
- Bake at 375 for 35-45 minutes, until golden brown and bubbly.
- Let sit for 10-15 minutes before serving.
- This is a very old family recipe from a woman I work with.
- I am kind of a mac&cheese junkie and have tried many over the years.
- This one is tops, bar none.

- PS If you have trouble finding Lawry's seasoned pepper, you can substitute McCormick's, not as good, but will do.
SUPER DELUXE OLD FASHIONED MACARONI AND CHEESE
Steps:
- Preheat oven to 350 degrees F. Meanwhile, melt 4 tablespoons of the butter in a non-reactive saucepan. When bubbly whisk in flour and cook for a couple of minutes, stirring every now and then. Slowly whisk in the milk and bring to a boil. Reduce heat to low and simmer, whisking on occasion for 3 to 4 minutes. Remove pan from heat and whisk in grated cheese. Stir vigorously just until cheese has melted. Then whisk in heavy cream to adjust the texture and season to taste with salt and cayenne pepper. In a mixing bowl combine sauce with sun dried tomatoes and drained macaroni and adjust seasoning. Transfer mixture to a 13 x 9-inch baking pan and spread it out evenly. Sprinkle bread crumbs on top and dot with remaining 4 tablespoons of butter. Bake until hot and bubbly, about 30 minutes. Let stand 5 minutes before serving.

OLD-FASHIONED MACARONI
I love Macaroni & Cheese and this is my all time favorite recipe from a newspaper food section a long time ago. It's quick, it's easy and it reheats the next day fabulously. This recipe gets requested more often then any other from my very fussy 12 year old niece so it's a real winner with kids too.

- Place water in a large microwave-safe bowl.
- Microwave, covered, at high for 10 minutes to bring to boil.
- Add the macaroni, stir and cover.
- Microwave 7 to 8 minutes at high.
- Stir, cover and let stand 3 minutes.
- Drain.
- Place half the cooked macaroni in a buttered 6-cup microwave-safe baking dish.
- Sprinkle with half the cheese, top with half the sour cream and dot with half the butter.
- Repeat with remaining ingredients.
- Sprinkle with paprika.
- Microwave, uncovered at high for 8 to 10 minutes.
- My notes: I cook macaroni on stove top instead of microwaving it.
- My microwave is so old it takes forever to boil water.
- I also will mix up the cheese sometimes using different cheddars but it's really great if you use some freshly grated pecorini cheese as well in the mix.
OLD-FASHIONED MACARONI AND CHEESE FOR THE MICROWAVE
When my daughter was little, she used to call this "macaroni and home-made cheese" much to the delight of her grandmother with whom the recipe originated. Grandma always used Velveeta, but we usually use cheddar. I have used whatever I have on hand. Monterey Jack is especially good. Use your favorite cheese. This recipe takes little more effort than a box, is faster than frozen, and is oh so much better than both. Everyone will think you cooked all day.
