OLIVE OIL BANANA BREAD
A moist banana bread made with olive oil, Greek yogurt (or sour cream), and a crunchy walnut topping. I borrowed techniques from a few recipes to create my ideal recipe!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease and flour a 10x5-inch loaf pan.
- Sift all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and cinnamon together.
- Beat brown sugar, white sugar, and eggs in a stand mixer or with a hand-held electric mixer until light and fluffy, about 5 minutes. Reduce speed to low and slowly drizzle in olive oil until evenly combined. Beat in bananas, Greek yogurt, and vanilla extract until combined. Fold in 1/3 of the flour mixture with a spatula; repeat twice more until flour is fully incorporated.
- Pour batter into the prepared loaf pan. Sprinkle walnuts and Demerara sugar over the top.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 55 to 60 minutes.

SPICED KETO BANANA BREAD
A combination of olive oil, coconut and almond flour yields a moist, sliceable loaf, flavored with warm spices and speckled with walnuts. If you can keep yourself from consuming it all at once, this bread can last for 2-3 days without compromising flavor or texture.

- Preheat oven to 350 degrees. Lightly grease a 9" x 5" loaf pan with olive oil. Line with parchment, leaving a 2-inch overhang on all sides.
- In a medium bowl, whisk to combine almond flour, coconut flour, baking powder, salt, cinnamon, cardamom, nutmeg, and cloves.
- Place bananas in a large bowl. Mash until smooth with a fork or potato masher. Add olive oil, eggs, vanilla, and honey or other sweetener and mix to combine. Add dry ingredients and stir until incorporated. Add walnuts and coconut flakes and fold to combine. Transfer to prepared loaf pan and smooth top.
- Bake until a toothpick comes out clean and bread is lightly golden, about 40 minutes. Lift parchment to remove from pan and let cool on a rack. Slice and serve.

WHOLE WHEAT OAT BANANA BREAD
Very gooey and yummy, this is my favorite Banana bread recipe. TIPS: Buy whole wheat flour that has NOT been bleached. Use only PURE honey. Use Almond, Rice or Soy milk (try not to use cow milk). Extra virgin cold pressed olive oil has the best taste and has no extra junk in it. Use real vanilla extract, imitation has too many chemicals and not as good a flavor. Has plenty of fiber to help cleanse the colon which is always the best place to start cleaning for a successful diet and a healthy lifestyle.

Steps:
- Preheat oven to 350.
- Oil bread pan.
- Mix oat bran, flour, baking soda, baking powder and walnuts in a bowl.
- Put honey, olive oil, egg, milk, vanilla extract and bananas in blender and mix completely.
- Add to dry ingredients and mix well.
- Pour into pan.
- Bake for 30 minutes.
- Cool completely.
- Enjoy.

- Mash the bananas in a large bowl (I like to make them as smooth as possible, but some chunks are okay). Mix together with the eggs, olive oil, and vanilla extract.
- In a separate bowl, add all of the remaining ingredients (flour, brown sugar, baking powder, salt, and spices). Mix together and break apart the brown sugar so that there aren't any more large clumps.
- Add the wet and dry ingredients together and mix until thoroughly combined. Transfer the batter to the prepared loaf pan. Bake until a knife, skewer, or cake tester (my preferred tool) inserted in the middle of the bread comes out clean, 55 to 60 minutes. Let the bread cool in the pan for 15 minutes before removing to a baking rack to finish cooling completely. Slice and serve.
