Steps:

  • In a small bowl, combine the soup mix, garlic powder and oil. Spoon half into a large resealable plastic bag; add chicken. Seal bag and turn to coat. Spoon the remaining marinade into another large resealable plastic bag; add potatoes and carrots. Seal bag and turn to coat., Arrange chicken and vegetables in an ungreased 11x7-in. baking dish. Cover and bake at 425° for 15 minutes. Uncover; bake 15-20 minutes longer or until a thermometer reads 170° and vegetables are tender.,

Steps:

  • In a big stock pot, heat the oil over med-high heat; add in the chicken and brown it for about 2 minutes per side.
  • Add in the onion, carrots, garlic, and chili powder; cook the mixture for about 5 minutes more, until the vegetables soften slightly.
  • In a strainer, rinse the quinoa thoroughly with cold water.
  • Add in the chicken broth, tomatoes, potatoes, and quinoa; bring the liquid to a boil, decrease the heat, and simmer the stew for 30-40 minutes.
  • Just before serving, stir in the spinach and let it wilt for about 2 minutes; check seasoning and add salt and pepper to taste.

  • Heat the butter in a large heavy-based pan. Add the onion, carrot and celery and cook gently until softened.
  • Add the chicken thighs, garlic, spices and thyme. Cook stirring until the chicken is opaque.

  • In 5 qt saucepan over medium heat, melt butter.
  • Add chicken and onion and cook 5 minutes or until chicken is no longer pink.
  • Add chicken broth and heat to boiling.
