Steps:
- Whisk together eggs, milk, flour, baking powder, and onion salt in a bowl to make a smooth batter.
- Heat the oil in a large saucepan or deep fryer until a thermometer reads 350 degrees F (175 degrees C).
- Dip the onion rings evenly into the batter, then fry in the oil for 2 to 3 minutes, working in batches if necessary, until the onion rings are golden brown. With a slotted spoon, remove the onion rings to paper towels to drain. Serve hot.

ONION RINGS WITH A KICK!
Delicious Onion Rings with Chipotle Powder. It has a smokey flavored kick to them. Measurements are approximate; I eyeball it. I deep fry. I originaly started with the Fried Vegetables recipe on the back of the Kentucky Kernel Seasoned Flour from Hudgson Mill, Inc.. It was way too salty for my taste. So I added the rest, and now I love the taste. Probably good for other vegetables too.

Steps:
- Preheat deep fryer oil to 350 deg.
- Mix batter: Kentuckey Kernel Flour, egg and water.
- Slice onion in thick rings, and separated.
- Mix DRY INGREDIENTS [mix in large plastic baggie]: All purpose flour, Chipotle Chili Powder, Garlic Powder, Onion Powder, and set aside.
- Dip individual onion rings into batter.
- Take onion rings out of batter and place in dry ingredients, coat liberally.
- Fry a few coated onions in at least 2 inches of 350 deg. oil for 2-3 minutes. Several batches may be needed. I just keep the onion rings in the baggie until I have room for them in the oil.

OLD FASHIONED ONION RINGS
This is an actual recipe from a former employee of a popular drive-in restaurant. Crispy coated onion rings like the pro's make!

Steps:
- Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
- Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
- Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
- Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

- Use a fork to steady your onion. Slice the onion into rings about 1cm wide. Remove the skin and separate the rings.
- Heat the oil to 180C in a heavy-based pan - it should be no more than 1/ 3 full.
- Meanwhile put the flour and sparkling water in a bowl and season generously. Whisk together to form a batter.
- Coat a small batch of onion rings in batter. Carefully lower into the hot oil and deep-fry until crisp and golden, about 2 - 3 minutes. Remove with a slotted spoon and place on a piece of kitchen towel to drain. Repeat with the remaining onion and batter.

- Preheat the oven to 250 degrees.
- Combine the buttermilk, hot pepper sauce and sugar in a medium bowl until the sugar dissolves.
- Combine the flour, cornmeal, baking powder, Old Bay, salt and pepper in a shallow baking dish.
- Peel and cut the onions into 1/4-inch-thick slices.
- Separate the onion slices into rings and towel dry.
- Dip the rings in the buttermilk and shake off the excess liquid.
- Dredge the rings in the flour mixture, shake off the excess.
- Meanwhile, heat the oil to 400 degrees over medium-high heat in a large heavy pan.
- Add the onions to form a single layer on the oil's surface and cook until golden brown, no more than 3 minutes.
- Using tongs, transfer the onions to the paper towel-lined plate.
- Let stand 2 minutes to drain, then carefully transfer to the rack in the warm oven.
- Repeat till all are fried.
- Season with salt!

- At least 4 hours ahead of time, place the sliced onion rings into a large dish and pour buttermilk overtop. You don’t have to drown the onions, just make sure they are somewhat submerged. Cover tightly and store in the refrigerator. In this step, you are soaking the onions, which will tenderize them. I strongly suggest soaking them for at least 12 hours for the best taste. I soaked mine overnight.
- Preheat oven to 425°F (218°C). Line two large baking sheets with parchment paper or silicone baking mats. In a medium bowl, beat the egg whites. Set aside. In a large shallow dish (I used a pie dish), mix the whole wheat flour, cornmeal, bread crumbs, and the seasonings together until combined.
- Remove each ring from the buttermilk and dip in egg whites. Immediately submerge in the bread crumb mixture, mixing around to coat the onion well. If the bread crumbs won’t adhere, dip in egg whites and then the breading again. If you find you need more breading, make more.
