HAMBURGER STEAKS WITH ONION AND MUSHROOM GRAVY
This recipe is an update of the classic Salisbury steak. With additions like smoked paprika in the beef mix and lightly caramelized onions in the gravy, this version will be a new family favorite to enjoy with a side of mashed potatoes.

- For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
- Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
- For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
- Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
- Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.
- Turn the patties over a few times to coat in the sauce. Season with salt and pepper and top with the parsley.

- Preheat grill.
- Heat oil in a large nonstick skillet over medium-high heat.
- Add onion, and cook for 5 minutes or until golden.
- Add mushrooms and salt; cook 5 minutes, stirring constantly.
- Add vinegar, remove mixture from pan.
- Set aside.
- Combine the paprika and the next 4 ingredients (paprika through black pepper).
- Divide the ground meat into 4 equal portion, shaping each into a 1/2 inch thick patty.
- Coat patties with spice mixture.
- Grill patties 4 minutes on each side or until done.
- Place burger patties on muffin halves, and top each burger with 1/4 cup onion mixture.

- In a large, heavy skillet, melt butter or margarine.
- Cook onions over medium-low heat until golden brown.
- Add the mushrooms and continue cooking until mushrooms are tender.
- Let sit until cool enough to handle.
- In a large bowl, mix the sirloin, salt, pepper, steak sauce, and onion-mushroom mixture.
- Form into 5 burgers.
- In same skillet, heat olive oil over medium heat.

- Heat grill. In medium bowl, combine ground beef, soup mix and Worcestershire sauce; mix well. Shape into four 1/2-inch-thick patties.
- Thread onion slices onto two parallel 10 to 12-inch metal skewers. Brush both sides of onion with oil or spray with nonstick cooking spray.

- In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. - Warm olive oil and butter in a large saute pan on medium low heat. Peel and slice onions into long, thin slices. Drop all of the onions into the pan, add salt and pepper to taste and toss to coat all of the onions in the oil and butter. Leave them alone to caramelize, only stirring occasionally for at least 30 minutes.
- Preheat your grill. Mix ground beef and Worcestershire Sauce together in a large bowl. Shape the beef into hamburger patties. I generally make burgers that are 1/3 pound each but do whatever your family prefers. Rub the outsides of the burgers with a thin layer of olive oil, salt and pepper the outsides. Move the burgers to the grill and cook them to your desired temperature. Heat hamburger buns quickly on the grill or in the oven.
- Ten minutes before you are ready to build your burgers, add mushrooms to the caramelized onions and toss them to mix and to coat them with oil. Continue to cook them over medium low. The mushrooms will become soft but at the low temperature will not lose all of their moisture and will be juicy and delicious! The onions should have lost all of their punch and only be sweet and soft now - and completely browned.
