Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Beat butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Stir egg white and applesauce into butter mixture until just combined into a dough. Add orange juice with pulp and orange zest to the dough; stir.
  • Mix flour, oats, walnuts, baking soda, cream of tartar, and cinnamon in a separate bowl; fold into the dough until evenly incorporated.
  • Drop by heaping tablespoon onto prepared baking sheets.
  • Bake in preheated oven until bottom of cookies are lightly browned, 10 to 12 minutes. Cool on baking sheets 2 to 3 minutes before moving to wire racks to cool completely.

Steps:

  • Heat oven to 350°F. Grease cookie sheets. In large bowl, combine brown sugar, shortening, orange juice, orange peel and eggs mix well. Add flour, baking soda and salt mix well. By hand, stir in oats, nuts and coconut. Drop by rounded teaspoonfuls 2 inches apart onto greased cookie sheets.Bake at 350°F. for 10 to 12 minutes or until light golden brown. Cool cookies 1 minute remove from cookie sheets.HIGH ALTITUDE - Above 3,500 feet: Increase flour to 2 1/2 cups. Steps:

  • Preheat oven to 350°; grease two cookie sheets or line them with Silpat.
  • In a bowl, combine the flour, baking soda, salt, and oats.
  • In a bigger bowl, combine the sugar, butter, shortening, orange juice, zest, and eggs; mix well.
  • Add the flour mixture and blend.
  • Drop the dough onto the cookie sheets using two tablespoons or a small ice cream scoop.
  • Bake for 12 minutes until the edges become golden brown.
  • Cool then on the cookie sheets because the cookies are soft.
