- Orange Beef:.
- Spray a large nonstick wok or skillet with nonstick spray and set over high heat. When a drop of water sizzles on it, add the scallions, garlic, ginger, and orange zest; stir-fry until the scallions soften, about 1 minute.
- Add the beef and stir-fry until browned, about 3 minutes. Add the sugar snap peas and baby carrots; stir-fry until crisp-tender, about 2 minutes. Stir in the soy sauce and orange juice; bring to a simmer and cook 20 seconds.
- Meanwhile, mix the cornstarch and water in a small bowl until smooth. Add the cornstarch mixture to the wok and cook, stirring constantly, until the sauce is thickened, 30 seconds. Serve with Barley Pilaf. Point value 3.
- Barley Pilaf:.
- Bring broth to a boil in a saucepan; add quick-cooking barley. Simmer, covered, 12 minutes.
- Spray a skillet with nonstick spray and set over medium-high heat. Add mushrooms and cook until tender. Add the barley and soy sauce.
- Serves 4 Point Value 2.

Although another recipe for this has been posted, it has been altered. I found this in the Sacramento Bee and according to them is taken from WW and has not been altered. It is hard to believe this recipe is a low fat dish.

- Preheat oven to 350 degrees. Spray a nonstick baking sheet with nonstick cooking spray.
- In a small bowl, combine the orange juice, mustard and salt. On a sheet of wax paper combine the cracker crumbs, orange zest, shallot, and pepper. Brush the chicken on both sides with the mustard mixture then dredge in the crumbs, firmly pressing the crumbs to coat both sides. Place the chicken on the baking sheet.
- Bake 15 minutes, turn over and bake until cooked through. 15 to 20 minutes longer.

- Preheat the oven to 200. Wrap the tortillas in foil and bake untiln warmed through, about 5 minutes.
- Meanwhile, in a large nonstick skillet, heat the juice concentrate and oil over medium-high heat until bubbling. Add the chicken, coriander, chili powder, and salt; cook, stirring, until the chicken is cooked through, 5-10 minutes, adding a little water if the pan becomes dry. Stir in the bell peppers; simmer until the mixture thickens. Remove from the heat and keep warm.
- To serve, top a warm tortilla with 3/4 cup of the chicken mixture and 1 tablespoon of the sour cream.
- Cook's Tip: You can warm the tortillas in the microwave, 2 at a time, between layers of damp paper towels. Microwave on HIGH, turn tortillas every 10 seconds, until soft, about 40 seconds. Resume the recipe at step 2.
