Steps:

  • For the cream: In a saucepan, bring some water to a boil, then reduce the heat to a simmer. Have a mixing bowl ready that will fit over the top of the pan but not sink all the way in.
  • Put the egg yolks in the mixing bowl off heat. Add the granulated sugar and whisk until the yolks start to turn pale. Place the mixing bowl over the saucepan with the simmering water. Scrape the seeds from the vanilla bean and add to the egg mixture. Slowly add the rum and whisk to combine. Cook over the simmering water until thick, using a rubber spatula to scrape the bowl, about 5 minutes. Cover with plastic wrap and refrigerate until cool.
  • For the orange liqueur raspberries: Add the raspberries, confectioners' sugar, orange liqueur and orange zest to a bowl and mix together. Let macerate for 1 hour.
  • To assemble: Pile the fruit into 6 individual martini glasses and top with the cream. Crush a cookie over each one and garnish with mint.

5 large egg yolks
1/2 cup granulated sugar
1 vanilla bean, split
2 tablespoons rum
2 pints raspberries
1/4 cup confectioners' sugar
2 tablespoons orange liqueur, such as Grand Marnier
Zest of 1 orange
6 vanilla wafer cookies
6 sprigs fresh mint

Steps:

  • Preheat the oven to 375 degrees F.
  • In a mixer fitted with a whisk attachment, whip the egg whites until foamy. Add the cream of tartar and salt and continue whipping until soft peaks form. With the mixer running, gradually add 1 cup of the sugar and continue whipping until stiff and the sugar has dissolved, about 30 seconds. Sift the remaining 1/2 cup sugar with the presifted cake flour 3 times, to aerate the mixture. Fold into the egg whites, then fold in the vanilla.
  • Spoon the batter into ungreased extra-large muffin tins. Bake until light golden brown, 20 to 25 minutes. Cool the cakes by turning the muffin tin upside down and suspending it with small ramekins placed in the corners until they cool to room temperature. Run a butter knife around the cakes to loosen, then knock the cakes out onto a plate, or work them out with your fingers. The outside of the cake will remain in the pan leaving the cake whiter and more angelic looking.
  • Make the macerated fruit by lightly tossing together the fruit, liqueur, lemon juice, and mint and let macerate in the refrigerator for at least 30 minutes before serving. Hollow out the center of the large cup cakes. Fill the cavity with some fruit then turn them over onto dessert plates. Spoon the macerated berries and juices over the cakes and sprinkle with powdered sugar.

1 1/2 cups egg whites (from about 1 dozen eggs), at room temperature
1 1/4 teaspoons cream of tartar
1/2 teaspoon salt
1 1/2 cups sugar
1 1/8 cups sifted cake flour
1 teaspoon pure vanilla extract
1/2 pint raspberries
1/2 pint blackberries or blueberries
1 pint strawberries, hulled (green tops removed) and sliced
1/4 cup orange liqueur
1 teaspoon fresh lemon juice
2 mint leaves, julienned
Powdered sugar, for garnish

20 EASY RASPBERRY COCKTAILS - INSANELY GOOD

Category Beverages, Recipe Roundup
  • Floradora. This semisweet, gin-based drink is brilliantly red at the bottom and fades to a translucent light pink at the top. It’s a beautiful drink that’ll draw plenty of compliments.
  • French Martini. This martini may have a lovely light pink color, but in terms of potency, it’s strong. You’ll make it with premium vodka (preferably a French vodka), Chambord liqueur, fresh pineapple juice, and a dash of sea salt for contrast.
  • Raspberry Vodka Lemonade Cocktail. Raspberry vodka lemonade somehow manages to be sweet, tart, and tangy all at once, and the addition of fresh fruit in every glass only makes things better.
  • Raspberry Caipirinha. Here’s another wonderfully tart drink with a shockingly red hue. You can whip it up in only 5 minutes with half a lime, some raspberries, a teaspoon of sugar, and two ounces of cachaca.
  • Raspberry Bellini. If you prefer mixed drinks that are light, bubbly, and not too alcohol-heavy, try this recipe for the raspberry bellini instead. You’ll make it with only three ingredients – champagne, Torani raspberry syrup, and raspberries – and it’s a tingly, elegant drink that’ll help you join in with the festivities without getting too drunk.
