Orange, Tomato, Broccoli, and Sweet Onion Salad with Orange Vinaigrette image

Steps:

  • Steam broccoli until crisp-tender, about 3 minutes. Place broccoli in large bowl.
  • Cut peel and white pith from oranges. Holding oranges over small bowl to catch juice, cut between membranes to release segments. Cut each orange segment crosswise into 3 pieces. Add orange pieces, tomatoes, onion, and fresh basil to bowl with broccoli.
  • Add oil, vinegar, and orange peel to bowl with collected orange juice; whisk to blend. Season to taste with salt and pepper. Pour vinaigrette over broccoli mixture and toss to coat.
  • Divide salad among 4 plates and serve.

2 cups 3/4-inch pieces broccoli florets (about 8 ounces)

1 cup diced sweet onion (such as Vidalia or Maui)

Steps:

  • Steam broccoli until crisp-tender and put in a large bowl.
  • Cut peel and white from oranges.
  • Holding oranges over a small bowl, break apart into slices and then cut the slices into thirds- catching the juice in the bowl.
  • Add orange pieces, tomatoes, basil and onions to the bowl with the broccoli.
  • Add oil, vinegar and orange peel to the bowl with the orange juice; whisk until combined.
  • Season dressing with salt and pepper to taste and pour over broccoli; toss to coat.
  • Enjoy!

  • Grate 1 tsp orange peel from the orange and squeeze 1/4 cup juice.
  • Heat the oil over medium high heat in a large skillet until hot.
  • Add the broccoli and cook for about 5 minutes, stirring occasionally.
  • Add ginger, garlic, and orange peel and cook 1 or 2 minutes longer until the veggies are tender, crisp.

Steps:

  • Wash and cut broccoli into florets.
  • Bring about 1 cup of water to boil in a saucepan over high heat.
  • Add broccoli florets, reduce heat to medium and cover.

  • In a heavy saucepan, combine egg, sugar, honey, mustard and cornstarch with a whisk until smooth. Gradually whisk in water and vinegar.
