BAKED SHRIMP SCAMPI
Ina Garten's Baked Shrimp Scampi recipe, from Barefoot Contessa on Food Network, can be made ahead of time for easy entertaining.

- Preheat the oven to 425 degrees F.
- Peel, devein, and butterfly the shrimp, leaving the tails on. Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper. Allow to sit at room temperature while you make the butter and garlic mixture.
- In a small bowl, mash the softened butter with the garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, 1/2 teaspoon salt, and 1/4 teaspoon of pepper until combined.
- Starting from the outer edge of a 14-inch oval gratin dish, arrange the shrimp in a single layer cut side down with the tails curling up and towards the center of the dish. Pour the remaining marinade over the shrimp. Spread the butter mixture evenly over the shrimp. Bake for 10 to 12 minutes until hot and bubbly. If you like the top browned, place under a broiler for 1 minute. Serve with lemon wedges.
QUICK OVEN-BAKED SHRIMP
These tangy baked shrimp I threw together with the ingredients I had on hand and not much time to stand at the stove, but my husband and I were very hungry. Surprise, surprise! It turned out to be fabulously tasty! Hope you like it too! Serve with rice.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a glass or ceramic baking dish with olive oil.
- Mix shrimp, tomato paste, chili powder, basil, garlic powder, and salt. Add lemon juice and mix well. Add cilantro; mix well. Pour into the prepared baking dish and cover with aluminum foil.
- Bake in the preheated oven until shrimp are bright pink, 20 to 25 minutes; don't overcook, the shrimp will get hard.

BAKED BREADED SHRIMP RECIPE - (3.9/5)

- Preheat oven to 450 F. Spray a large baking sheet with cooking spray, set aside. In one medium bowl combine Panko breadcrumbs, plain breadcrumbs and Parmesan cheese. In another bowl beat eggs, add in garlic powder, paprika, parsley, salt and pepper. Defrost the shrimp according to the package, wash and dry with paper towel. Put shrimps in the egg mixture. Cover with plastic wrap and let it marinate for about 10 to 15 minutes in the fridge. Take shrimps from the egg mixture. Put a few at a time into the breadcrumb mixture to coat, then on the baking sheet. Lightly spray the top of the chicken with cooking spray. Bake shrimp in the middle rack for about 6 to 7 minutes. Turn shrimp over then cook another 3 minutes or until cooked though. Remove from the oven and serve right away with lemon wedges or your favorite sauce.
BUTTERFLIED BAKED SHRIMP
Steps:
- Preheat the oven to 400 degrees F.
- Spread the bread crumbs evenly on a baking sheet and toast in the oven until golden brown, about 10 minutes. Watch them carefully as they burn very quickly. Remove from the oven and cool. Raise the oven to 500 degrees F.
- Butterfly the shrimp by slicing from the tail to the front on the top of the shrimp, where the vein was. Slice as deep as possible without cutting all the way through. Turn the shrimp over and make 3 small shallow slits horizontally across the shrimp, being careful not to cut all the way through. These slits will prevent the shrimp from curling during cooking. Season with salt and pepper and set aside.
- Mix together the oregano, thyme, parsley, basil and garlic. Add the garlic herb mixture to the bread crumbs and mix well. Season with salt and pepper.
- Brush a large ovenproof skillet with some of the melted butter, coating the bottom well. Dip the shrimp in the butter, opened side down, and then dredge in the bread crumbs, pressing so they stick. Place the shrimp, bread crumb side up, in the skillet in 1 layer.
- When all of the shrimp are in the pan, drizzle the top with a little more of the melted butter. Bake for about 5 minutes, or until the shrimp are just cooked through and the bread crumbs are golden brown.
- Toss the arugula with the olive oil and lemon juice and season with salt and pepper. Divide the arugula among 4 plates. Place 4 shrimp around each pile of arugula. Drizzle with more butter, if desired, and serve with lemon wedges.
BAKED COCONUT SHRIMP
Steps:
- Preheat an oven to 400 degrees F (200 degrees C). Lightly coat a baking sheet with cooking spray.
- Rinse and dry shrimp with paper towels. Mix cornstarch, salt, and cayenne pepper in a shallow bow; pour coconut flakes in a separate shallow bowl. Working with one shrimp at a time, dredge it in the cornstarch mixture, then dip it in the egg white, and roll it in the coconut, making sure to coat the shrimp well. Place on the prepared baking sheet, and repeat with the remaining shrimp.
- Bake the shrimp until they are bright pink on the outside and the meat is no longer transparent in the center and the coconut is browned, 15 to 20 minutes, flipping the shrimp halfway through.

- Pat the peeled shrimp dry and set aside. In a small mixing bowl, stir together the whole-wheat breadcrumbs, parsley, garlic, lemon zest (I've found a microplane grater to be the best tool for extracting zest), and salt with a fork. In a separate small bowl, beat the egg.
- To bread the shrimp, keep one hand “wet” (egg bowl only) and one hand “dry” (breadcrumb bowl only). Start by dropping a few shrimp into the egg mixture with your wet hand. While still using your wet hand, pick up the shrimp, shake off the excess egg, and then drop them on top of the breadcrumb mixture. Pick up a pinch of breadcrumbs with your dry hand and sprinkle them on top of the shrimp. Finish coating the shrimp with your dry hand and transfer them to the prepared baking sheet. Continue until all the shrimp are coated.
- Drizzle or spray more olive oil on top of the coated shrimp and bake until the shrimp are done all the way through and golden brown on the bottom, about 13 - 14 minutes.
