DUTCH APPLE PANCAKES
These are not your normal pancakes. Let them puff up as big as you want it just adds to the flavor and fun for young kids. This was a family favorite found in a vegetarian cookbook my mother had but we have our own variations. You'll probably want to make a double batch.

Steps:
- Preheat oven to 450.
- Melt 1 1/2 tbs butter in a regular size skillet.
- Mix Eggs, Flour, Milk, and Salt together in a bowl. When well blended put in skillet.
- Cook for 15 minutes in oven.
- Drop temp to 350 and cook for another 10 minutes.
- While pancake is cooking mix 4 tbs butter, Applesauce, honey or sugar, cinnamon, and nutmeg in a small sauce pan and warm.
- Cut pancakes like a pie and top with sauce.

- Preheat oven to 350 degrees F.
- In a 10-inch cast iron skillet, warm the apple pie filling, butter, cinnamon.
- In a bowl, beat the eggs until frothy. Add the milk, flour, sour cream, lemon zest, and salt.
- Beat just until batter is smooth.
- Pour over the hot apple mixture in the skillet, and immediately put the pan in the oven. Bake for 20 to 25 minutes, or until the pancake is puffed up and golden brown. Using a small, fine sieve, lightly dust the top of the pancake with confectioners' sugar. Serve warm.

DUTCH OVEN-PUFFED APPLE PANCAKE
I use my cast-iron skillet when I make this recipe, but an ovenproof, non-stick skillet would work just as well. This is a brunch favorite.

- Preheat oven to 450 degrees Fahrenheit.
- In a medium bowl, beat the 3 eggs and milk until well blended. Add the flour and salt; stir until batter is barely blended (the batter should be slightly lumpy).
- In another bowl, toss apple slices with sugar, 2 tablespoons of lemon juice, and cinnamon.
- Melt unsalted butter in a heavy, ovenproof 12-inch cast-iron or non-stick skillet over medium-high heat. Add apple mixture and saute 4 minutes, or until slightly softened. Spread out apples into an even layer; pour batter over apples.
- Bake in preheated oven for 20 minutes, or until pancake is golden brown and puffed.
- Sprinkle with the juice of half a lemon and dust with confectioner's sugar. Serve immediately.

Steps:
- Preheat oven to 425 degrees. Beat eggs until light and fluffy in a medium size bowl.
- Add milk, vanilla and a few dashes of cinnamon.
- Add flour and beat for 30 seconds into a light batter.
- Set aside.
- Mix together the sugar and cinnamon.
- Melt butter in skillet then add sugar mixture.
- Immediately add sliced apples stirring to coat evenly.
- Cook apples 3 minutes on medium heat, stirring to coat.
- Remove from heat and pour in egg batter, arranging the apples evenly on top.
- Sprinkle with a little more cinnamon.
- Bake in a 425 degree oven for 13-15 minutes (it will puff up).
- Remove from oven and sprinkle with powdered sugar.
- Cut into 4 wedges and serve hot with lemon wedges and butter, or with maple syrup (or both).
DUTCH APPLE BABY
No fresh milk? Don't despair! This quick and easy variation of the classic Dutch Baby pancake features ingredients you probably have in your pantry.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat applesauce in a small saucepan over medium heat until hot but not boiling. Pour applesauce into blender. Add the eggs. Blend until combined; about 5 seconds. Add vanilla, sugar, salt and flour. Blend until evenly mixed. Add two tablespoons of melted butter. Blend another 30 seconds.
- Heat oven-proof skillet on medium heat. Pour a tablespoon of melted butter into skillet and swirl it around to coat the bottom and sides of the pan. Immediately pour the batter into the skillet; place in middle rack of oven.
- Bake until golden brown around the edges and the pancake is puffed, about 20 minutes.
- Brush the last tablespoon of melted butter evenly over pancake. Sift powdered sugar over top, if desired.
- Mix together 2 tablespoons flour, 1/4 cup sugar, and 1/2 teaspoon cinnamon in a small bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle over the Dutch Baby. Serve immediately.

- Preheat oven to 425 degrees.
- Melt butter in a 9 inch glass pie pan in oven.
- Arrange apple slices, then walnuts over butter.
- Bake until apples begin to soften and walnuts are lightly toasted, about 5 minutes.
- While the apple mixture is in the oven, using an electric mixer, beat eggs, milk, flour, sugar, vanilla, cinnamon and salt in a large bowl to blend.
- Stir in cranberries.

GERMAN APPLE PANCAKE
Also known as a Dutch baby, this is a terrific 'special day' recipe. If you are strapped for time, you can start it the evening before and pretty much pop it in the oven. The presentation is excellent! You can shorten the preparation time by using apple pie filling, but the crisp of new apples really makes it.

- In a large bowl, blend eggs, flour, baking powder, sugar and salt. Gradually mix in milk, stirring constantly. Add vanilla, melted butter and 1/2 teaspoon nutmeg. Let batter stand for 30 minutes or overnight.
- Preheat oven to 425 degrees F (220 degrees C).
- Melt butter in a 10 inch oven proof skillet, brushing butter up on the sides of the pan. In a small bowl, combine 1/4 cup sugar, cinnamon and 1/2 teaspoon nutmeg. Sprinkle mixture over the butter. Line the pan with apple slices. Sprinkle remaining sugar over apples. Place pan over medium-high heat until the mixture bubbles, then gently pour the batter mixture over the apples.
- Bake in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C) and bake for 10 minutes. Slide pancake onto serving platter and cut into wedges.

DUTCH APPLE PANCAKE (VEGAN)
I got the original recipe for this out of the South Beach Diet 30 minute meal cookbook. It wasn't vegan. Because I like to eat vegan often I changed some of the ingredients. My pancake was more like a crepe on the outside and more custard inside then puffy,which I think is due to using banana instead of the eggs. You could probably use Ener-G egg replacers here as well. The original recipe had 210 calories, so making it vegan made it even better.

- Heat oven to 400'F.
- Heat (on medium) 1 tablespoon of the margarine in a 10" cast iron skillet.
- Saute the apples for about 5 minutes, or until nice and brown on the outside. I didn't peel my apples, I like the added fiber the peeling adds.
- Puree 1 tablespoon vegan margarine, flour, sugar, agave, cinnamon, nutmeg, milk and banana in a blender until just combined. About 1 minute.
- Pour the puree over the apples in the skillet and then put the skillet into the oven and bake until set and puffed, about 15 minutes.
- Serve hot.
- Bon Appetit!
