- Heat oven to 375*F. In a small cup or bowl, combine egg white and milk. Combine cereal, cornmeal, and seasonings in a small zippered plastic bag.
- Dip chicken legs into egg white and milk, then drop into plastic bag and shake to coat.
- Bake chicken legs in nonstick baking dish for 25 minutes. Turn and bake an additional 7 to 10 minutes or until done.
- For an extra-crispy version, use cracker crumbs instead of cereal. This coating is great on fish, too.

- Combine buttermilk, salt, and pepper in a large bowl. Add chicken pieces and marinate at room temperature for 30 minutes.
- Preheat the oven to 450 degrees F (230 degrees C). Line a rimmed baking pan with foil and place in the oven.
- Combine cornstarch, panko, smoked paprika, Greek seasoning, onion powder, poultry seasoning, salt, and pepper in a large resealable bag.
- Remove chicken legs from buttermilk, drain, and dip legs one at a time into the dry coating mixture.
- Remove pan from the oven with pot holders and add 1 tablespoon melted butter to the pan. With a pastry brush, spread melted butter all over the pan.
- Lay coated chicken legs into the pan. Pour half of the melted butter over chicken legs.
- Roast in the preheated until chicken is no longer pink at the bone and the juices run clear, about 40 minutes, turning over at the halfway point. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Drizzle with remaining melted butter and serve immediately.

- Preheat the oven to 400 degrees F. Set a rack on a foil-lined baking sheet. Spray the rack generously with cooking spray.
- Finely grind the bagel chips and cereal together in a food processor. Transfer the crumbs to a gallon-size plastic bag. Add the oil, salt, cayenne, paprika and ground pepper and toss to mix thoroughly. Whisk the light mayonnaise and Dijon mustard together in a medium shallow bowl.
- Add the chicken to the mayonnaise mixture and turn to coat all the pieces evenly. Drop the chicken into the plastic bag, seal and shake until each piece is evenly coated. Place the coated pieces on the prepared rack. Spray the chicken pieces evenly with cooking spray.
- Bake until the coating crisps and browns and an instant-read thermometer inserted in the thickest part of the pieces registers 160 degrees F, 35 to 40 minutes.
- Transfer to a platter and serve hot or at room temperature.

- Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
- Preheat the oven to 350 degrees F.
- Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.
- Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. - Preheat the oven to 250 degrees F. In a large bowl, whisk together the buttermilk, eggs, and 2 tablespoons mustard. Add the drumsticks and toss to coat, then set aside.
- Fill a large cast-iron pan with 1/2-inch oil and heat over medium heat until shimmering. Meanwhile, combine the cornflake crumbs, flour, thyme, granulated garlic, 1 teaspoon salt, and 1/4 teaspoon black pepper in a shallow baking dish; set aside. - Preheat oven to 350 degrees F (175 degrees C).
- Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
- Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated. Pour the oil into a 9x13 inch baking dish. - Heat a large electric skillet to 375'.
- Place oil and butter in skillet til hot.
- Meanwhile mix together flour,salt,pepper,seasoning salt,chicken bouillon,and beau monde seasoning in a large plastic baggie or a bread bag and shake to blend.
- Wash and towel dry chicken legs and add to plastic bag with mixture.
- Shake to coat legs.
- Place in hot oil and fry, turning every 10 minutes. Til browned evenly.

- Heat oven to 400. Line a jelly-roll pan or shallow roasting pan with foil. Coat with nonstick cooking spray.
- Skin chicken by grasping skin with paper towels and pulling off.
- In a pie plate or shallow bowl, slightly beat egg. Coat a few drumsticks in egg at a time.
- Place desired crunchy coating (listed below) in plastic food bag. If using tortilla chips, stuffing mix, french fried onions, cheese crackers, or honey mustard pretzels, close bag and crush with a rolling pin. Put 1 or 2 drumsticks in the bag at a time and shake to coat chicken evenly.
- Place on prepared pan; lightly coat drumsticks with cooking spray. (If using fried onions or honey mustard pretzels, do not spray). Bake 30-35 minutes until chicken is cooked through and coating is browned.
- Italian: 1 cup wheat germ, 1/3 cup grated parmesan, 1/4 teaspoon each garlic salt and pepper.

- Preheat oven to 450 degrees F. Pour the vegetable oil over bottom of 15x10x1 inch baking pan.
