  • Foie gras. Because it is so unique and so famous worldwide, I had to go with foie gras as number 1—despite the criticisms about how the ducks reared for this purpose are overfed to make them fatter.
  • Steak-frites (Steak with French Fries) If there was a national dish, it would have to be steak-frites, which is a piece of beef with French fries. Now, before I go any further, French fries are not French, they come originally from Belgium—that’s the reason why I decided not to give them their own spot in the list.
  • Jambon-beurre (Ham Sandwich) This is the most classical and popular sandwich in France: the one that you will find in every single bakery in the country; the one that people buy at the railway station to snack on during their journey; the one that families prepare for a picnic at the beach; the one you make yourself in the morning when you know you have a busy working day ahead and won’t have time to go out for lunch…

  • Place a rack in the lower third of your oven and preheat to 450 degrees F. Drizzle a large rimmed baking sheet with 1 1/2 tablespoons olive oil, brushing it as needed so that it nicely coats the pan.
  • Scrub the potatoes and peel if desired (I leave the peels on). Slice into 1/4-inch-wide sticks. Place the potatoes in a large bowl, then pour very hot tap water over the top so that it covers the potatoes by at least 1 inch. Let sit 10 minutes.
  • Drain the potatoes, then transfer them to a clean towel and dry as completely as you can, changing the towel as needed. Rinse and wipe out the bowl you soaked the potatoes in, then return the potatoes to the bowl. Drizzle with the remaining 1 1/2 tablespoons olive oil and sprinkle with salt, garlic powder, dill weed, onion powder, and pepper. Toss to coat, making sure the spices and oil are well distributed. Spread the potatoes into a single layer on the prepared baking sheet.

  • Slice the potatoes lengthwise into 1/4-inch thick planks, then cut them into 1/4-inch strips (I don’t peel the potatoes, as I like the flavor and appearance of the skin, but you could peel them if you prefer). Transfer the potatoes to a large bowl and cover them with 1-2 inches of very hot tap water. Let sit 10-15 minutes. Drain the potatoes, rinse them well, then pat them very dry using kitchen towels.
  • Drizzle 1 tablespoon of the olive oil over the parchment-lined baking sheet. Spread the potatoes over top, and drizzle them with the remaining 1 tablespoon of oil. Sprinkle with the granulated garlic, and season well with salt and pepper. Toss well to coat the potatoes, then spread them in a single layer (it’s okay if the potatoes are touching but they shouldn’t be overlapping—you can use 2 baking sheets if needed).

  • Slice each potato in half the long way, lay the cut side flat on the cutting surface and cut into 1/2-inch to 1/4-inch slices. Stack these slices and cut them into the same width sticks to make french fries. Repeat with the remaining potatoes.
  • Put the cut potatoes in a large bowl and cover with cool water. Soak for at least 20 minutes or up to an hour. This step gets rid of excess starch, resulting in fluffier and crispier fries. Alternatively, you can place fries in a pot. Cover with cold water and add about 1 tsp salt. Bring the potatoes to a boil for 5 minutes. Drain the water. If I am short on time, I skip these steps and the fries are just a little less crispy. No big deal.
