- In a large bowl, combine first four ingredients. Sprinkle with sugar; set aside. In a large saucepan, combine dressing ingredients; bring to a boil. Remove from the heat and pour over vegetables; toss to coat. Cover and refrigerate overnight. Stir well before serving. Serve with a slotted spoon.

- Place vegetables in large bowl. Set aside. In processing bowl Whisk vinegar, oil, sugar, salt, pepper and mayonnaise till smooth.
- Pour over vegetables and toss.
- Cover and refrigerate overnight stirring occasionally to blend flavours.
- Vegetables can be shredded mechanically or manually.
- 8 hours are cooling time.

SPECTACULAR OVERNIGHT COLE SLAW
This has to be one of the most flavorful coleslaws I have ever made. The flavors blend wonderfully. The addition of olives is a welcome surprise in the flavor. The best part is make ahead. Most slaws I have to wait till time to serve to add the dressing. This gets better overnite, so it is great to make ahead and out the door. Or it is one more dish you can get done the day before company coming, which is what I love. But irregardless of all those perks, it is a dish that I would make even if it was a little bit of a pain. - Whisk together the vinegar, salt, sugar, celery salt, pepper and garlic in a large bowl until combined. Reserve 1/4 cup of the dressing for serving. Toss the green cabbage, red cabbage and carrots in the remaining dressing until the vegetables are completely coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour and up to 3.
- Strain the coleslaw through a colander and discard the liquid. Transfer the coleslaw to a serving bowl. Drizzle with the reserved dressing and the oil. Season with salt and pepper if necessary. Toss to coat.
SWEET AND SPICY COLESLAW

- Quarter and core the cabbage. Peel the carrots and onion and cut into pieces that will fit through the feed tube of a food processor. Fit the food processor with the grater attachment and push the cabbage, carrots and onion through the feed tube to grate. Toss the grated vegetables in a large bowl.
- Prepare the coleslaw dressing by whisking together the mayonnaise, mustard, cider vinegar, sugar, 1 teaspoon black pepper and the cayenne in a medium bowl. Toss the dressing with the cabbage mixture and season with salt and pepper. Cover with plastic wrap and chill at least 2 hours before serving.

CREAMY COLESLAW
This is a modified version of a Betty Crocker recipe. It's ready after resting for 1 hour after preparation, but it should be made at least overnight, preferably 2 days in advance, to generate excellent sweetness and creaminess. The sour cream "kicks it up" just enough to generate a lot of compliments. I added a touch of vinegar, offset with sugar, which seems to greatly promote the development of flavor as it "ages". NOTE: I don't bother shredding the cabbage and carrot, I simply buy a 16 oz. bag of "shredded cabbage and carrots for cole slaw" in the salad veggies section of my supermarket. The listed prep time is based on that short cut.
