Steps:
- Melt margarine in a 9 x 13 baking pan.
- Put 6 slices of bread in bottom of pan.
- In a bowl mix 1 cup brown sugar with 1 tsp cinnamon.
- Sprinkle 1/2 of this sugar mixture over bread.
- Add another layer of 6 slices of bread.
- In a bowl, whisk eggs with milk until well blended.
- Pour over bread layers.
- Sprinkle with remaining sugar mixture.
- Cover and refrigerate overnight.
- Bake covered at 350F 30 minutes.
- Uncover and continue baking 15 minutes or until set and browned.

- Mix eggs, milk, vanilla, and cinnamon together.
- Place bread slices in a greased 9x13-inch pan. Pour egg mixture over top. Cover and refrigerate, 8 hours to overnight.
- Remove from the refrigerator 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C).
- Cream together brown sugar, butter, and corn syrup; it will be very thick. Spread over the bread, then sprinkle with walnuts.
- Bake in the preheated oven until golden brown, about 1 hour.

- Pour melted butter into an 11x15-inch baking dish. Sprinkle brown sugar and cinnamon over the butter and top with bread slices, making sure slices are placed close together.
- Mix milk, eggs, and vanilla extract in a bowl until thoroughly combined; pour over bread in the baking dish. Cover with aluminum foil and refrigerate, 8 hours to overnight.
- Preheat the oven to 350 degrees F (175 degrees C).
- Place the covered casserole in the preheated oven and bake for 30 minutes. Uncover, and bake until puffed and lightly golden, about 15 minutes more.

- For the French toast: Coat a 9- by 13-inch baking dish with cooking spray. Arrange the bread slices on the diagonal in 3 rows in the dish, slightly overlapping the slices. Whisk together the evaporated milk, milk, vanilla and almond extracts, cinnamon, salt and eggs until well combined. Pour the egg mixture over the bread slices, taking care to evenly coat the bread. Cover with aluminum foil and refrigerate for at least 8 hours, or overnight. Preheat the oven to 350 degrees F. Remove the foil from the baking dish and spoon any remaining egg mixture over the top of the bread pieces to assure they are evenly moistened.
- For the topping: Sprinkle the pecans evenly over the bread. Sprinkle with 2 tablespoons of the maple syrup and the cinnamon. Bake until golden, about 40 minutes. Drizzle with the remaining 1/4 cup maple syrup and serve.
OVERNIGHT FRENCH TOAST

Try making it with a stale loaf that you forgot to eat amid all the other holiday goodies. A fat brioche, fruit-filled panettone or a braided challah all work well. Stay away from croissants, though: Their chewy interiors are best enjoyed fresh.

- Butter a 2-quart baking dish. Butter the front sides of the slices of bread and shingle the slices upright in the dish, overlapping as necessary. Nestle the raisins evenly between the slices of bread but not on top.
- In a large bowl, whisk together eggs, milk, cream, sugar, cinnamon, nutmeg, vanilla and salt until well combined. Pour the milk mixture over the bread and press the bread gently to absorb. Cover with plastic wrap and refrigerate overnight.

- Slice ends from bread and discard or save for another use. Slice remaining loaf into eight 1-in. slices and arrange in the bottom of two greased 8-in. square baking pans. , In a large bowl, beat the eggs, yolks, cream, brown sugar, pie spice and flavorings. - Butter a casserole dish (large rectangular one).
- Fill dish with bread slices so dish is covered with bread.
- Mix eggs, milk, half and half, vanilla, nutmeg, and cinnamon.
- Pour mixture over bread slices.
- Refrigerate overnight (must hold overnight).
- Make topping: Mix butter, brown sugar& corn syrup.
- Stir in pecans.
- Spread evenly over bread slices.
- Bake uncovered until puffed and golden about 40 minutes at 350.
- Let stand 5 minutes before serving.
