Steps:

  • Gently pound the steak to 1/4-inch thickness. Sprinkle the inside of the meat with salt and pepper. In a bowl, combine the eggs, breadcrumbs, cheese, parsley and garlic. Place the mixture down the middle of the meat. Drizzle 2 tablespoons of the olive oil over the meat. Roll the meat with the grain and tie with butcher's twine in three places to secure the roll. Sprinkle the outside of the roll generously with salt and pepper. Heat a Dutch oven over high heat, add the remaining 1/4 cup olive oil and sear the beef on all sides until golden brown. Remove the meat from the pan and set aside.
  • In the same pan, turn down the heat to medium. Add the tomato paste and cook 3 more minutes. Then deglaze the pan with the wine, scraping all the fond from the bottom. Add Jeff Mauro's Marinara Sauce. Bring to a simmer, and then add the meat back to the pan. Simmer over low heat until the meat is tender, about 2 hours.
  • Remove the meat from the pot and season the sauce again with salt and pepper, if necessary. Cut the twine from the meat and slice against the grain into 1/4- to 1/2-inch slices. Serve with extra sauce and a bowl of hot giardiniera.
  • Heat a large saucepan over medium heat. Add the oil, the onions, garlic, Italian seasoning and red pepper. Sweat until the onions are translucent, about 10 minutes, stirring to avoid burning. Add the crushed tomatoes. Once the sauce begins to bubble turn down the heat to low and simmer, stirring occasionally, for 20 minutes. Take off the heat and set aside for later use.

One 1 1/2- to 2-pound flank steak
Salt and freshly ground black pepper
2 large eggs, beaten
1 cup seasoned breadcrumbs
1 cup grated Pecorino Romano
3/4 cup fresh flat-leaf parsley leaves, minced

Steps:

  • Preheat the oven to 225 degrees F. Fit a baking sheet with a wire rack.
  • Season the tenderloin with the granulated garlic and plenty of salt and pepper. Transfer to the wire-racked baking sheet and place on the middle rack in the oven. Roast low and slow until the internal temperature registers 120 degrees F, 2 to 2 1/2 hours.
  • Remove the tenderloin from the oven, cut off the butcher's twine and coat in the softened butter. Set the oven to broil. Broil each side until crusty and golden, about 30 seconds a side. Set aside to cool, reserving any juices for later.
  • Slice the tenderloin as thinly as possible. We are looking for a smooth bite down here, so thin slices are key. Pour the accumulated juices over the slices and hit with more salt and pepper.
  • Cut off the top crust of the boule about 1 inch down to create a lid. Hollow out the rest of the bread into a bread bowl. Smear the mustard over the bottom of the bread bowl. Next, spread with the Mushroom Duxelles. Then, add the sliced tenderloin; we are looking for a lot of height here, so ribbon those slices! Next comes a layer of baby spinach. Close with the top of the bread bowl and completely wrap in 3 layers of foil.
  • Place a heavy wooden cutting board on top and use books, weights, giant cans, etc. to press down on the sandwich evenly. We are looking for maximum compression here, so 50 pounds is the goal. Just make sure the weight is distributed evenly. Press for a minimum of 4 hours at room temperature.
  • Unwrap, slice into wedges and serve.
  • Add the mushrooms, garlic and shallot to a food processor and pulse a few times until coarsely chopped.
  • Heat the butter in a 12-inch skillet over medium-high heat until melted. Add the mushroom mixture and stir. Cook, stirring every couple of minutes, until the mushrooms begin to brown. Season with salt and pepper, deglaze with the sherry, then add the fresh thyme. Set aside to cool.

One 2-pound center-cut beef tenderloin, trimmed and tied with butcher's twine
1 tablespoon granulated garlic
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter, at room temperature
One 10- to 12-inch boule
1/4 cup Dijon mustard
Mushroom Duxelles, recipe follows
1 cup baby spinach
2 pints cremini mushrooms
2 cloves garlic, chopped
1 shallot, roughly chopped
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1/4 cup dry sherry
1 tablespoon fresh thyme, minced

Steps:

  • For the steak: Preheat the oven to 200 degrees F. Fill a large cast-iron skillet with 1 1/2 inches of oil and heat over medium-high heat. Sprinkle the steak strips with salt and pepper. In a shallow bowl, add the flour. In another shallow bowl, lightly beat the eggs. In another shallow bowl, add the breadcrumbs. Lightly coat both sides of the steak in the flour, then in the egg and then in the breadcrumbs.
  • Pan-fry the steaks, however many can fit at a time, until golden brown on both sides, about 3 minutes per side. Remove the steaks from the oil and onto a baking sheet lined with a wire rack or paper towels. Season the fried steaks with salt and keep warm in the oven while you cook the rest, if need be.
  • For the roasted red pepper sauce: Combine the almonds, Parmesan, oil, paprika, bell peppers, garlic and shallot in a food processor and blend until smooth, about 15 seconds. Season, and then place into a small saucepan and simmer for 5 minutes to take away the raw garlic bite and intensify the flavors. Set aside.
  • For the sandwich build: Schmear some of the gorgonzola on the bottom half of the bread. Place the hot breaded steak on the cheese, then the roasted red pepper sauce and then the giardiniera. Repeat with the remaining ingredients. Cut in half and serve with extra red pepper sauce for smothering.
  • Combine 2 cups water and the salt in a glass or non-reactive bowl. Mix until the salt is dissolved. Add the carrots, cauliflower, serranos, garlic, celery and bell pepper to the salt water and stir to combine. Cover and refrigerate overnight.
  • Day 2, drain and rinse the vegetables. In a clean bowl, mix together the oil with the oregano and pepper. Add the vegetables and mix to combine. Allow to marinate overnight. Giardiniera will only get better with time. After 2 days at the most in the bowl, you can place in air-tight mason jars and keep in the fridge for at least 2 to 3 weeks.

Canola oil, for frying
1 1/2 pounds top sirloin, cut against the grain on the bias into eight 1/8-inch strips or fingers
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
4 eggs
3 cups Italian-style breadcrumbs
1/4 cup smoked almonds
1/4 grated Parmesan
2 tablespoons extra-virgin olive oil
1/4 teaspoon paprika
3 red bell peppers, fire roasted, from a jar
1 clove garlic, smashed
1/2 shallot, chopped
Kosher salt and freshly ground black pepper
4 ounces gorgonzola dolce, at room temperature
Four 6-inch tomato focaccia rolls, split and toasted (or your favorite focaccia bread)
Homemade Hot Giardiniera, recipe follows (or your favorite oil-packed hot giardiniera), finely chopped
1/4 cup table salt
1 cup small-diced carrots
1 cup tiny cauliflower florets
4 to 8 serrano peppers, sliced (depending on heat level desired)
2 cloves garlic, minced
1 stalk celery, diced small
1 red bell pepper, diced small
2 cups canola oil
1 tablespoon dried oregano
1/2 teaspoon freshly ground black pepper

FRANKIES SPUNTINO PORK BRACIOLE

Frank Castronovo and Frank Falcinelli, who own the Frankies Spuntino restaurants in New York, prefer to keep it mellow. "I cooked on the line for 18 years," Mr. Falcinelli told The Times. Mr. Castronovo, equally low-key, said, "We like to take the easy approach." That means many of their dishes, like vegetable antipasti, grilled meats and wine-stewed prunes, are cooked well ahead and assembled to order or served at room temperature. In this version of braciola, the meat rolls are covered with canned tomatoes that become sauce as the meat cooks. "My grandfather calls it gravy," Mr. Falcinelli said. "For the Sunday sauce, you do spareribs, sausage, meatballs, braciola." The Franks' version is lighter, meant to be eaten with salad and bread, not steaming pasta. Leftovers are good for sandwiches the following day.

Steps:

  • Preheat oven to 325 degrees. Line cutlets up on a clean work surface with the shorter sides on top and bottom (seam side up, if made from a butterflied cut). Season with salt and pepper, and sprinkle with minced garlic, parsley and cheeses. Roll a cutlet into a tight log. Stretch butcher's twine along the length of the roll; wrap string tightly around one end and continue wrapping to the other end, each turn an inch from the previous one; tie loose ends. Repeat with remaining braciola.
  • Empty two cans of tomatoes into a mixing bowl. Use your fingers to break tomatoes apart, and discard firm cores and tops. Pour half the sauce into a deep-sided roasting pan. Season with salt and pepper.
  • Place a large skillet over medium-high heat, and add oils. When oils are hot but not smoking add braciola and sear, rotating every minute or so, until browned all over. Reduce heat to medium, add whole garlic cloves and sauté 2 to 3 minutes. Transfer braciola to roasting pan, allowing garlic to continue cooking until golden. Add a cup of remaining sauce to skillet, and scrape browned bits from bottom; shut off heat, and pour over braciola. Add remaining sauce to braciola, completely covering braciola. (If there isn't enough sauce, use another can of tomatoes.) Cover tightly with foil, and bake until tender, from 1 to 3 hours. Check frequently for doneness.
  • Snip twine off braciola. Arrange, whole or sliced, on a platter, drizzle with some sauce and transfer remaining sauce to a serving bowl. Serve hot or at room temperature. Garnish with Parmigiano-Reggiano.
