- Cut 1 pounds peeled Yukon Gold potatoes into 1-inch chunks; toss with 3 tablespoons olive oil, 3 chopped garlic cloves, 1 teaspoon kosher salt and 1/2 teaspoon each pepper and dried oregano in a 9-by-13-inch baking dish. Add 1/4 cup each lemon juice and chicken broth. Roast at 425 degrees F until the potatoes are tender, about 30 minutes. Toss with chopped parsley.

Steps:
- In a skillet, melt bacon fat.
- Add onions and saute 2-3 minutes.
- Add potatoes, salt, and paprika (there should be enough to make potatoes almost orange).
- Fry, covered, over medium heat until soft and tender.
- If it starts sticking and forming a crust on the bottom, turn the heat down and add a little water.
GREEK-STYLE LEMON ROASTED POTATOES

- Preheat oven to 400 degrees F (200 degrees C).
- Put potato wedges into a large bowl. Drizzle olive oil and lemon juice over the wedges and toss to coat. Season potatoes with salt, oregano, and black pepper; toss again to coat.
- Spread potato wedges in a single layer in a 2 inch-deep pan. Pour chicken broth over the potatoes.
- Roast potatoes in preheated oven until tender and golden brown, about 1 hour.

- Bring a pot of salted water to a boil. Gently poach the fingerlings for 5 minutes. Drain the potatoes, cut in half and dry thoroughly.
- Heat a large pan over medium-high heat. Melt the butter, add the leeks and season with salt and pepper. Saute until softened, about 8 minutes. Set aside.
- In the same pan, heat the olive oil. Put the fingerlings cut-side down in the pan and cook until golden brown, about 5 minutes; flip and repeat on the skin side. Add back the leeks, drizzle with the honey and cook for another 2 to 3 minutes.
- Sprinkle with the parsley and lemon zest. Season with additional salt and pepper to taste.

- Preheat the oven to 350 degrees F (175 degrees C).
- Stab the potatoes with a fork and microwave until cooked, about 9 minutes. Let cool, about 10 minutes. Slice into wedges.
- Heat 1 tablespoon oil and butter in a small pan over medium-low heat. Saute onion and garlic with salt and pepper until tender and sweet, 5 to 7 minutes. Remove from heat.
- Heat enough remaining oil to coat the bottom of a large nonstick pan over medium-high heat. Cook potatoes in batches, making sure they aren't crowded in the pan. Turn carefully until golden and crispy, 7 to 10 minutes. Keep the first batch in the preheated oven until the second batch is done.
- Add olives to the second batch and cook for 1 minute. Add potatoes from the oven and onion-garlic mixture. Toss in the pan until everything is heated. Drain on paper towels and sprinkle with parsley, salt, and pepper.

- Boil the potatoes in a large pot of salted water until tender,about 15 to 20 minutes, then drain. Once they are cool enough to handle, peel them.
- Rinse the fish in cold water, then coat each one in the flour, patting off the excess.
- Melt 5 tablespoons of the butter in a skillet and pan-fry the fish for 5 minutes on each side, or until crisp and golden.
- Keep the cooked fish warm while you cook the remainder.
- Melt the remaining butter in a non-stick skillet.
- Add the potatoes and let them sauté a little before adding the parsley. Season with salt and pepper.
- Serve immediately with the potatoes, sliced lemon, and dill sprigs.

- Boil potatoes for 2 minutes,leave them to stand in the boiling water for antother 5 minutes and drain.
- Cut into 1cm slices.
- Add zucchini to pan of water, leave them till it boils again,and drain.
- Add olive oil to non tick pan,add potatoes,fry 2 minutes turning once if possible.
- Add mushrooms and cook for 2 minutes.
- Add zucchini, garlic,parsley and lemon rind.
- Toss until heated trough.

- Place the potatoes in a large sauce pan and cover with cold water. Add the garlic, rosemary sprigs and lemon half to the water and season well with salt.
