Pan-Seared Pork Chops With Maple Gravy and Apple Bacon Hash image

Steps:

  • APPLE-BACON HASH:.
  • Cook bacon until crisp and browned. Drain on paper towels, reserving bacon fat. Heat butter and 2 tbsp bacon fat in a skillet. Add potato, onion, garlic, and apple. Cook until lightly brown, about 10 minutes. Remove from heat and add the seasonings. Keep warm.
  • PORK CHOPS:.
  • Heat remaining bacon fat. Season pork, add to pan, and cover. Cook, turning occasionally, until done, about 15 minutes. Transfer the chops to a plate and cover to keep warm.
  • MAPLE GRAVY:.
  • Pour off all but 1 tbsp of pan drippings. Whisk in flour and let bubble for 1 minute. Whisk in chicken stock, maple syrup, and cream. Bring to a boil. Cook, whisking often, until mixture reduces and thickens, about 2 minutes. Season with salt and pepper.
  • Crumble the bacon over the hash. Serve with chops and sauce.

Steps:

  • Marinade chops in oil and vinegar (for at least 30 minutes or up to 3 hours).
  • Season chops and heat a black iron skillet or shallow fry pan.
  • (Medium/High heat) When pan is hot sear chops (do not turn for 3 minutes) then flip and sear other side.
  • (searing will seal in the juices so chops will not dry out).
  • As soon as chops are done remove them and put butter and onions into pan.
  • Cook till onions are done to desired consistency.
  • Enjoy!

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat a skillet over medium-high heat. Sear the pork chops in the preheated skillet until browned, 2 to 3 minutes per side. Arrange seared chops into a casserole dish.
  • Whisk maple syrup, water, onion, vinegar, Worcestershire sauce, chili powder, salt, and pepper together in a bowl to dissolve the chili powder; pour over the pork chops.
