PANCAKES FOR ONE
Treat yourself to fluffy American-style pancakes with this simple recipe for one person. Drizzle over maple syrup and serve with berries, if you like

Steps:
- Separate the egg, putting the white and yolk in seperate bowls. Mix the egg yolk with the flour, baking powder and milk to make a smooth paste.
- Beat the egg white and a pinch of salt with an electric whisk (or by hand) until fluffy and holding its shape. Gently fold the egg white into the yolk mixture. Be extra careful not to knock any of the air out.
- Heat the butter and oil in a non-stick frying pan. Dollop a third of the mixture into the pan and cook on each side for 1-2 mins or until golden brown. Repeat with the remaining mixture to make three pancakes. Drizzle over some maple syrup or honey and serve with berries, if you like.

Ann Schenk (at Left) of Winnett, Montana, has used the recipe for Pancakes for One for years. Originally it served six. "As our kids grew up and left home, I scaled down the recipe," Ann says. "Now if my husband, Mike, or I have a taste for these pancakes, it's easy to make just a few."

- In a bowl, combine flour, wheat germ, baking soda, baking powder and salt. In another bowl, beat egg; add buttermilk an oil. Stir into dry ingredients just until blended. , Pour batter by 1/3 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until the second side is golden brown. Serve with butter and syrup.

PANCAKES FOR ONE OR TWO
This is another recipe I found in the 1998 Taste of Home Annual Recipes. It was sent in to them by Ann Schenk of Winnett, Montana.She added two teapoons of wheat germ when the dry ingredients were mixed together, but I left it out. And they seemed to come out just fine.This recipe make enough for one, but if you make them just a bit smaller you could get enough for two. And serve eggs and sausage on the side for a much heartier breakfast or even dinner.Serve with margarine and syrup, if desired. Submitted to " ZAAR " on October 28th, 2009

Steps:
- Tip the flour and a pinch of salt into a bowl. Make a well in the centre and pour in the milk and egg. Whisk together, starting in the middle, to create a smooth batter. It should be the thickness of double cream.
- Heat a little of the butter and oil in a non-stick frying pan. Add a sixth of the batter to the pan, quickly swirling it so there are no holes. Fry on one side for 1-2 mins then flip over and cook for a further 1 min. Keep on a plate, covered, in a warm oven. Repeat with the remaining batter to make six pancakes in total. Serve with sugar and lemon, if you like.

Well, here's the answer! This recipe makes a total of 3 terrific buttermilk pancakes if you use a 1/3 cup measure.
