The Greatest Quesadilla image

Steps:

  • Toss together the Cheddar, Monterey Jack and pepper jack in a bowl; set aside.
  • Heat 2 tablespoons of the butter in large skillet over medium heat. Place a single tortilla in the skillet. Sprinkle a little less than a third of the cheese blend over the tortilla. Sprinkle with salt and pepper. Add about a third of the diced tomato and a third of the chiles. Sprinkle a touch more cheese over the whole thing and gently top and press with a second tortilla. Cook until golden on the bottom, about 3 minutes.
  • Carefully flip the quesadilla to the other side. Continue cooking until the second side is golden, 3 to 4 minutes more. Repeat with the remaining ingredients. Slice each quesadilla into wedges and garnish with cilantro sprigs.

1 cup grated white Cheddar cheese
1 cup grated Monterey Jack cheese
1 cup grated pepper jack cheese
6 tablespoons salted butter
Six 8-inch flour tortillas
Pinch of kosher salt
Pinch of freshly ground black pepper
2 Roma tomatoes, diced
One 4-ounce can diced green chiles, drained
9 fresh cilantro sprigs, for garnish

We used to get these at Nick's in San Diego -since we've moved away I had to recreate. Something different to do with left-over mashed potatoes.

Papas Quesadilla image

Steps:

  • Preheat oven to 350°F.
  • Heat oil in a shallow (oven-proof) skillet.
  • Fry tortillas until crisp and browned on both sides - drain on paper towels.
  • Drain excess oil from skillet and wipe out.
  • Warm mashed potatoes.
  • One one tortilla sprinkle one-third of the cheese, then spoon on the potatoes, top with one-third of the cheese, then the other tortilla, top with remaining cheese.
  • Place quesadilla back in the skillet and put in the oven for 3-5 minutes until the cheese is melted.
  • Slice into wedges.
  • Possible compliments: Taco sauce, Pico de Gallo, salsa, green onions, sour cream.

Chorizo Quesadillas image

Steps:

  • Preheat a nonstick skillet or griddle pan to high heat. Blister a flour tortilla for 20 seconds, flip. Cover half the tortilla surface with shredded cheese, bits of chorizo or andouille, and chopped scallions. Fold the tortilla in half and cook a minute longer, 30 seconds on each side, pressing down gently with a spatula. Cut quesadillas into 4 wedges and top with salsa.
  • For salsa, combine ingredients in a small bowl and spoon over wedges of quesadilla, as you snack.

4 large (12-inch) flour tortillas
2 cups shredded Monterey pepper Jack or smoked Cheddar
1/2 pound chorizo or andouille, casing removed and finely chopped
2 scallions, chopped
3 small plum tomatoes, seeded and chopped
1 jalapeno, seeded and finely chopped
1 small white onion, finely chopped
Handful cilantro, finely chopped
Coarse salt

Easy Pizza Quesadillas Recipe image

Steps:

  • Heat a skillet over medium heat and fry the pepperoni until crisp - transfer to a paper towel to drain.
  • Brush each tortilla with a thin layer of pizza sauce.
  • Sprinkle cheese on top of the sauce on the bottom tortilla. Top with pepperoni. Sprinkle another layer of cheese and place the other tortilla on top, sauce side down.
  • Preheat a greased skillet over medium heat.
  • Gently place quesadilla in the pan and cook for 3 to 5 minutes on each side, until cheese is melted and tortillas are crispy.
  • Slice into quarters and serve with a bowl of warm pizza sauce.
