PAPRIKA FRIES WITH DILL MAYO

Steps:
- For the fries: Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
- Stir the salt into a large bowl of cold water until dissolved, then add 1 cup ice cubes. Submerge the potato wedges and soak for 20 minutes. Drain the potatoes and pat them dry.
- Toss the potatoes in the oil on the baking sheet. Bake, tossing halfway through, until browned, about 1 hour.
- Combine the paprika, garlic powder and onion powder in a small bowl. When the potatoes are done baking, toss with the spice mixture and season as desired with salt and pepper.
- For the dill mayo: Meanwhile, combine the mayonnaise, yogurt, mustard and dill in a medium bowl. Season with salt and pepper. Serve with the fries.
SMOKY PAPRIKA HOME FRIES
Steps:
- Heat the oil in a cast iron pan, on the grill or stove, over medium heat. Add the onion and cook until caramelized. Add the potatoes, and garlic and cook until warmed through. Stir in the paprika and parsley and transfer to a serving bowl. Garnish with cilantro sprigs, if desired, and serve.

When I first saw this recipe I though it was "Geek"-style, not Greek. Tried them anyway, and they're very good, geeky or Greeky!

- Cut each potato lengthwise into 8 wedges.
- Combine lemon juice, olive oil, oregano, pepper, salt, and garlic in a large bowl.
- Add potatoes and toss well to coat.
- Place potatoes, skin side down, on a baking sheet that has been coated with cooking spray.
- Bake at 400 degrees for 45 minutes or until potatoes are tender and lightly browned.

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble. Reserve 1 tablespoon bacon grease in the skillet.
- Season chicken pieces with salt and pepper. Place chicken in the skillet with bacon grease and cook over high heat until chicken is golden brown on all sides, about 10 minutes. Transfer chicken to a plate.
- Cook and stir onions in the same skillet until softened, 5 to 10 minutes. Reduce heat to low and stir paprika and caraway seeds into onions; add chicken. Cover skillet and cook for 30 minutes. Add potatoes to chicken mixture, cover skillet, and cook until potatoes are tender and chicken is no longer pink in the center, about 30 more minutes. Transfer chicken and potatoes to a serving dish.
- Stir sour cream, parsley, and garlic powder into the same skillet until sauce is smooth and creamy, 3 to 5 minutes. Pour sauce over chicken and potatoes and sprinkle with bacon.
