PARMESAN BREAD PUDDING WITH BROCCOLI RABE AND PANCETTA image

Steps:

  • Preheat oven to 350. Heat oil in large skillet over medium heat. Add garlic and red pepper flakes, stir 30 seconds. Add broccoli rabe and sauté until wilted for 2 minutes. Cool slightly. Whisk eggs, milk, 2 t salt, 1/2 t pepper in large bowl to blend. Add broccoli rabe mixture with 1/2 c parmesan. Toss to combine and transfer to 1 1/2 qt baking dish. Top with pancetta and 2 T parmesan. Bake until puffed and brown and set in center for 45-55 minutes.

1 T olive oil
2 garlic cloves sliced
1/2 t red pepper flakes
1 bunch broccoli rabe cut into 1/2" pieces
2 t kosher salt
1/2 t black pepper
6 eggs
1 1/2 c milk
1/2 lb country style white bread cut into 1" pieces
1/2 c plus 2 T parmesan
6 thin slices pancetta

Old Fashion Bread Pudding With Caramel Sauce image

Steps:

  • Place the bread cubes in a 9 x 13 buttered glass pan.
  • Sprinkle the raisins over the bread.
  • Drizzle on the melted butter, do not mix into the bread cubes and raisins.
  • Set this aside.
  • In a large bowl, beat eggs until broken up and blend in the sugars, nutmeg, half and half and the milk.
  • DO NOT OVER BEAT THIS MIXTURE JUST COMBINE.
  • Pour the mixture over the cubes and raisins and let it all soak in, gently patting the bread down into the milk every now and then.
  • Sprinkle the top with a grating of more nutmeg.
  • Preheat the oven to 350 degrees F.
  • Bake the pudding for 50 minutes, checking about the 40 minute mark, that its not getting too brown-- If it is cover with foil loosely.
  • Bake until pudding is puffy all over and golden.
  • Remove to rack to cool.
  • Sauce-- In a saucepot over med.
  • heat, melt the butter, and brown sugar.
  • Bring to a boil, and remove from the heat.
  • Whisk in the salt, vanilla, and milk.
  • The sauce can be made ahead, then warmed in the microwave-- Cut cooled pudding into squares, and top each with hot sauce.

Bread Pudding with Praline Sauce image

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Coat a 13x9-inch baking dish with 1/4 cup melted butter.
  • Pour half and half and milk over bread in a large mixing bowl; let soak for 10 minutes before gently stirring. Stir eggs into the bread mixture until incorporated. Add sugar, vanilla extract, cinnamon, and raisins respectively, stirring each addition into the mixture before adding the next. Spoon bread mixture into prepared baking dish.
  • Bake in preheated oven until bread mixture is firm and pudding-like, about 50 minutes.
  • Stir 1/2 pound unsalted butter, heavy cream, and brown sugar together in a heavy saucepan; bring to a boil. Reduce heat to low, stir pecans into the cream mixture, and simmer until the sugar is dissolved and the sauce thickens, about 5 minutes; pour over bread pudding to serve.
