The simplest and most savory way to dress up chicken breasts for a quick supper is just to top them with mayonnaise, sprinkle with Parmesan cheese and bread crumbs, and bake. Dinner will be ready in 30 minutes or less.

PARMESAN & PANKO CRUSTED CHICKEN
This recipe was adapted from the recipe I found on the back of a Best Food Mayonaise jar. The mayonaise helps provide a moist piece of chicken and helps adhere the panko and cheese to the chicken. Feel free to add more/less of italian seasoning/garlic powder to taste. We are huge fans of garlic so I up the quantity used for our household.

- Combine panko crumbs, seasonings, and parmesan cheese in a bowl.
- In a separate bowl add mayonaise.
- Spread mayonaise on chicken then dredge chicken in crumb mixture
- Spray a baking sheet with cooking spray

PANKO PARMESAN CRUSTED CHICKEN WITH WASABI TOMATO SAUCE

- Preheat oven to 400 degrees F.
- Coat a large baking sheet with cooking spray.
- For the chicken:
- Season both sides of chicken with salt and black pepper. Place flour in a shallow dish. Place eggs in a separate shallow dish. Combine panko crumbs and Parmesan in a third shallow dish. Dip chicken first in flour, then in the egg and then panko crumb mixture. Transfer chicken to the prepared baking sheet and spray the surface with cooking spray. Bake for 25 to 30 minutes, or until chicken is golden brown and cooked through. Remove from oven.
- For the sauce:
- While the chicken is cooking, in a small saucepan, combine tomato sauce, wasabi paste, sugar, chili powder, and cumin. Set pan over medium heat and bring to a simmer, for 10 minutes. Remove pan from heat and reserve 2/3 cup of the sauce.
- Serve 4 of the chicken breast halves with remaining tomato sauce spooned over top. Reserve remaining chicken and 2/3 cup of the sauce for another use.

- Preheat oven to 350 degrees.
- Beat eggs in a bowl. Combine cheeses, bread crumbs and spices in a separate bowl.
- Dip chicken pieces in egg, then bread crumb mixture, then egg, then bread crumb mixture again.
- Place chicken on a cookie sheet and bake at 350 degrees for 35 minutes.
- Serve over pasta with marinara sauce and mozzarella. Or place chicken on a hoagie roll with marinara and mozzarella for a Chicken Parmesan Sub. Also great for dipping with marinara or ranch.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with foil and spray with cooking spray.
- Combine Parmesan cheese, panko, and garlic powder in a shallow bowl and set aside.
- Sprinkle chicken on both sides with salt and pepper. Brush skin liberally with mayonnaise. Press each thigh, skin-side down, into crumb mixture. Place thighs on baking sheet, skin-side up, and mist lightly with cooking spray.
- Bake in the preheated oven until chicken is no longer pink in the center and juices run clear, 35 to 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Cover a chicken breast with a piece of plastic wrap. Use a meat mallet (or rolling pin) to pound it out to uniform thickness, about 1/4 inch thick. Set aside & repeat with the remaining 3 chicken breasts. Season the chicken with 1/2 teaspoon kosher salt and ground black pepper if desired. Set aside.
- Grab 3 large plates or shallow bowls. Place the all-purpose flour on one, whisk the eggs on the second, and mix the panko breadcrumbs, seasoned Italian breadcrumbs & grated parmesan on the third. Lightly season each plate with kosher salt and ground black pepper and mix to combine.
- Working one by one, give each chicken breast a light dusting of flour (shaking off any excess), followed by a light coating of egg (shaking off any excess). Place the chicken into the panko parmesan mixture, pressing to adhere & coat the chicken as completely as possible. Shake off any excess breading and set aside. Repeat with the remaining chicken breasts.
- Add 3-4 tablespoons of the olive oil to a large skillet over medium-high heat. Once the oil is hot, give the skillet a swirl to ensure its entire surface is coated in oil. Working 2 chicken breasts at a time, carefully add the parmesan crusted chicken to the skillet. Be careful to avoid overcrowding the pan as it prevents browning. Cook 2-3 minutes per side, until the panko parmesan coating is crispy & golden brown & the chicken is cooked throughout. Transfer to a plate. Add the remaining 2-3 tablespoons of olive oil to the skillet, as needed, & repeat with the remaining 2 chicken breasts.
