  • In the heatproof bowl of an electric mixer set over (but not touching) simmering water, combine egg whites and sugar. Cook, whisking constantly, until sugar has dissolved and mixture is warm to the touch (about 160 degrees).

  • Switch to the paddle attachment. With mixer on medium-low speed, add butter, several tablespoons at a time, beating well after each addition. (If frosting appears to separate after all the butter has been added, beat on medium-high speed until smooth again, 3 to 5 minutes more.) Beat in vanilla. Beat on lowest speed to eliminate any air bubbles, about 2 minutes. Using a rubber spatula, gently fold in passion fruit curd until smooth.

Coconut Banana Cake With Passionfruit Frosting image

Steps:

  • Preheat oven to moderately slow, 160 centigrade.
  • Grease a deep 19cm square cake pan, line base with baking paper.
  • Combine coconut and milk in a bowl.
  • Let it stand for 30 minutes.
  • Beat the butter and the sugar in a bowl with and electric mixer until light and fluffy.
  • Add the eggs and beat until combined.
  • Stir in the sifted flour, then banana, coconut mixture and the extra milk.
  • Spread the mixture into the prepared pan.
  • Bake in the oven for around 50 minutes until cooked when tested.
  • Allow to stand for 5 minutes, then turn out to cool.
  • For the frosting, beat the butter and cream cheese in a small bowl with and electric mixer until light and fluffy.
  • Gradually stir in the icing sugar and the passionfruit pulp.
  • Spread cake with the passionfruit frosting.

  • Add half of the powdered sugar. Beat on low until mostly incorporated. Scrape down sides, then continue to beat on high until incorporated and airy.
  • Slowly add in 1 Tbl at a time of passion fruit puree. The amount you add depends on the consistency you prefer your American buttercream at and desired flavor. If you are going to add food coloring do this now as it will affect the consistency of your buttercream as well.
