PASTA & CHINESE UDONG NOODLES IN TOMATO SAUCE & SARDINES
Most Filipino Dishes have always been a fusion of various cuisines around the world. Hence, I've decided to experiment and make a fusion out of the Italian Pasta (spaghetti) and the Chinese noodle called Udong (w/c Pinoys often mixed with sardines for texture).

Steps:
- Boil Pasta in 5 cups of water with 1 tablespoon salt and 1 tablespoon olive oil for 12 minutes. Put in Udong Noodles after boiling pasta for 7 minutes. After 12 minutes, pour pasta/noodles into strainer and pour ice cold water on it. set aside. (Make sure you put the pasta when the water is already boiling, that's when the 12 minutes boiling starts).
- For the sauce -- put 3-4 tablespoons olive oil in a non-stick pan and saute garlic and onions. Then add tomatoes until soft pulp remains.
- Add Beef Bouillon Cube and Sardines. Then add spices: oregano, sage, ground black pepper & bell pepper.
- whisk until ingredients are well mixed.
- Reduce heat and simmer for 5 minutes.
- Serve with the Spaghetti-Udong Noodles.

PASTA DE SARDINE
A great pasta dish for those who like seafood with their pasta. This dish is not only fast and easy to prepare, it is delicious and it is of regional Spanish-Italian authenticity. Red wine or beer is the beverage of choice.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta, and cook for about 8 minutes, or until almost tender.
- While the pasta is cooking, heat olive oil in a skillet over medium heat. Add the onion, and cook for a few minutes until soft, then add the garlic, and cook until fragrant. Stir in the sardines with their sauce. When the sardines heat through, reduce heat to low, and simmer until the pasta is ready.
- When the pasta is almost done, drain, and add it to the sardine sauce. Stir, cover, and turn the heat off. Let stand for a few minutes to absorb the flavors of the sauce. Squeeze juice from the lemon over the pasta. Divide onto serving plates, and top with red pepper flakes and grated Parmesan cheese.

SPAGHETTI WITH SARDINES

- Cook the spaghetti in a large pan of boiling salted water according to pack instructions. Meanwhile, make the sauce. Heat the oil in a medium pan and cook the garlic for 1 min. Add the chilli flakes, tomatoes and sardines, breaking up roughly with a wooden spoon. Heat for 2-3 mins, then stir in the olives, capers and most of the parsley. Mix well to combine.
- Drain the pasta, reserving a couple of tbsp of the water. Add the pasta to the sauce and mix well, adding the reserved water if the sauce is a little thick. Divide between 4 bowls and sprinkle with the remaining parsley.

HOW TO TURN REGULAR PASTA TO CHINESE (ORIENTAL) NOODLES
Here you can use either thin spaghetti or Angel hair pasta into Chinese noodles. Great for Lo Mein or noodle soup. My Japanese friend who lives in Germany taught me this technique.

Steps:
- Bring lots of water to boil as you would usually cook pasta.
- Add salt (I use about 1TBSP) and baking soda.
- Add pasta and cook about 2 minutes longer than what the package says. Drain and use in any recipes in place of Chinese noodles.
