PASTA SALAD WITH MARINATED TOMATOES AND TUNA
Fresh, quick-marinated tomatoes make the best sauces for pasta salad because not much needs to be done beyond tossing the tomatoes with hot pasta, salt and olive oil. The juices from the tomatoes and the heat create a gloriously glossy combination. Feel free to make this pasta salad ahead of time, then toss in flaked tuna right before serving.

Steps:
- Toss cherry tomatoes, olive oil, shallot, garlic, oregano and vinegar in a large bowl. Season with 1 teaspoon salt and 1 teaspoon black pepper and let marinate for at least 15 minutes.
- Bring a large pot of water to a boil and season generously with salt.
- Add pasta to the boiling water and cook until al dente, 8 to 10 minutes, depending on the shape and brand of pasta. With a spider or slotted spoon, strain pasta directly into tomato mixture and toss to combine. Season to taste with more salt and pepper.
- Stir in flakes of tuna and serve with a drizzle of olive oil on top. The pasta can be served hot or at room temperature.
SUMMERY HERBED TUNA PASTA SALAD
Marry tuna, pasta, green beans and carrots with an herby white wine vinaigrette.

- Bring a large pot of salted water to a boil.
- Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
- Cook the green beans in the boiling water until crisp-tender, 3 to 4 minutes. Transfer the beans to a colander with a slotted spoon and run under cold water to stop the cooking process. Add them to the bowl with the dressing.
- Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
- Add the tuna, basil, carrots, celery, chives and tomatoes to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

- Fill a large pot with lightly salted water and bring to a boil. Stir in seashell pasta, and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through, but still firm to the bite, about 11 minutes; drain.
- Place green onions and lettuce in a large bowl. Add pasta, tuna, peas, and grated Cheddar cheese; mix well. Stir in dressing; toss to coat.

- Cook pasta to al dente.
- While the pasta cooks, finely grate enough lemon zest to measure 1 tablespoon and squeeze 1 teaspoon juice (or more, to taste) Mince garlic.
- Cut basil into thin strips.
- Chop scallions and tomatoes.
- Toast and chop nuts.
- In a large bowl toss together all ingredients except for pasta.
- Check and correct seasoning, lemon juice, and amount of olive oil.
- When pasta is done, add it to bowl and toss with combined ingredients.
- Check and correct seasonings again.

- To make pasta salad with seared tuna, first boil the mezze penne in boiling salted water. Drain and season with a drizzle of olive oil. Spread the pasta on a baking tray to let cool. In the meantime, wash the tomatoes, dice them and transfer to a bowl.
- Chop the green olives (about 100 g) and add them to the tomatoes. Season with 2 tablespoons olive oil, salt, pepper and marjoram and let rest. Then mix with the pasta (once cold).
- Season the tuna on both sides with oil, salt and pepper. Heat it in a hot pan for about 1 minute on each side, then cut it into slices. Spread the tuna slices on the pasta and complete with marjoram and more green and taggiasca olives.
