SALMON PASTA

This method of cooking salmon makes for such tasty fish that you might want to serve it on its own. Just follow the first two steps, and serve the fillet with a green vegetable.

Salmon Pasta image

Steps:

  • Heat the broiler. Put fennel seeds in a small, self-sealing plastic bag, and crush with a rolling pin. Add parsley, brown sugar, 3/4 teaspoon salt, and 1 teaspoon pepper to the bag, and shake to mix.
  • Press the mixture onto the skinless side of the salmon. Broil salmon, skin side down, until it is no longer red in the center, about 8 minutes.
  • Flake the fish with a fork. Meanwhile, in a large pot of boiling salted water, cook pasta according to package instructions until al dente, about 13 minutes. Reserve about 1/2 cup cooking water, and drain pasta. Return it to the warm pot, add spinach, and toss.
  • In a bowl, mix together sour cream, lemon juice to taste, 1/2 teaspoon salt, and 2 tablespoons pasta water.
  • Put pasta on plates, top with salmon, and drizzle with the sour-cream mixture. Or simply toss pasta and spinach in the pot with the salmon and the sour-cream mixture, adding pasta water as needed, and serve.

Steps:

  • In 9-inch frying pan, melt the butter and saute the onions over low heat until tender but not brown. Stir in cream, increase heat to medium-high and simmer 5 minutes to reduce cream.
  • Stir in Cognac or wine, grated cheese and sun-dried tomatoes. Mix in salmon, and season to taste with salt and pepper. Simmer for 2 minutes more and set aside.
  • Cook pasta in plenty of boiling salted water with 1 teaspoon of salad oil, according to package directions; if fresh pasta is used, cook for 3 minutes.
  • Drain pasta and toss with salmon sauce in a bowl. Sprinkle chopped fresh dill on each serving, if desired.

Salmon Piccata with Herbed Pasta image

Steps:

  • Bring a large pot of water to a boil, then add a small handful of salt. Add the pasta and cook according to the package directions until al dente. Drain the pasta and reserve the pot.
  • While the pasta is cooking, melt 1 tablespoon of the butter in 2 tablespoons of the oil in a large skillet. Season the salmon with salt and pepper, then dust with flour. Add the salmon to the skillet and cook over medium-high heat, flipping occasionally, until golden on the outside and just cooked through, about 8 minutes.
  • In the reserved pot, melt 3 tablespoons of the butter in the remaining 4 tablespoons olive oil over low heat. Return the pasta to the pot, add all but 2 tablespoons of the herbs and toss well to coat. Season with salt and pepper.
  • Transfer the salmon to a plate; tent with foil to keep warm. Add the chicken broth, lemon juice and capers to the skillet. Simmer over high heat, scraping up any browned bits from the bottom of the skillet, until the liquid is slightly thickened, 3 to 5 minutes. Remove from the heat and gradually swirl in the remaining 2 tablespoons butter until emulsified. Stir in the reserved 2 tablespoons herbs and season with salt and pepper.
  • Add the salmon to the sauce and turn to coat. Divide the pasta among plates, top with the salmon and sauce and serve right away.

Steps:

  • Bring a pan of water to the boil and cook the fusilli according to the pack instructions.
  • Meanwhile, heat a knob of butter in a saucepan, then add the shallot and cook for 5 mins or until softened.
  • Add the peas, salmon, crème fraîche and 50ml water. Crumble in the stock cube.

Creamy Pasta with Salmon image

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • While pasta cooks, pour enough water into a frying pan to cover salmon; add dill. Strain in lemon juice. Mix and season with salt and pepper. Add salmon to the pan and poach over medium-high heat, flipping as necessary, until it flakes easily with a fork, about 10 minutes. Remove the skin when you flip it the first time.
  • At the same time, heat olive oil in a pan over medium to medium-high heat. Saute green beans and shallots until the shallots start to brown and the green beans soften, 8 to 10 minutes.
  • Once the salmon is poached, use tongs to set it aside in a shallow bowl, but don't throw the poaching mixture away. Take about 1/4 cup of the poaching mixture and add it to a saucepan. Add sour cream and chopped dill and mix over medium heat until combined. Remove from heat and mix into pasta.
  • Place pasta on serving plates, along with some chunks of the salmon, plus some of the sauteed mixture. Try to get an even mix if possible. Sprinkle with garden cress. Serve immediately!

SALMON PASTA

When I left school I worked in an Italian restaurant. For staff meals we were allowed various basic pastas, but we could pay extra for a more 'luxury' meal, such as seafood etc. Every Saturday, I'd 'spoil' myself and buy salmon pasta. Once I left the job, I would crave this pasta, so I had to try to recreate it as best I could. I do tend to vary the optional items depending on what I have in the fridge, but the basic stays the same. BTW, if you don't like garlic, you don't have to add it, but it is definitely worth it!

Salmon Pasta image

Steps:

  • Boil pasta as per manufacturer's instructions, and set aside.
  • In a frying pan, heat olive oil, and warm the crushed garlic cloves for just a few seconds. Add the smoked salmon strips and let them cook just enough to warm them. It doesn't need to be cooked as such, just enough heat to infuse the garlic with the salmon.
  • At this point add any optionals, such as capers or spring onions, but bare in mind that the salmon/garlic blend is already very rich.
  • When cooked, set aside.
  • Place the butter in a separate preheated saucepan and melt the butter down (on low heat). Once the butter is melted down add the plain flour.
  • Stir well and cook the mixture of butter and plain flour which should go a bit lumpy and dry at this stage.
  • Mix the milk and cream well.
  • Remove from heat and slowly, very slowly add the milk and stir. This must be done slowly, or it will become lumpy. Keep adding the milk until the desired thickness is achieved.
  • Add the sauce to the salmon and mix well.
  • Add the pasta, sprinkle with some parmesan cheese and black pepper and enjoy!

Pasta with Salmon, Broccoli Rabe, and Garlic image

Steps:

  • Cook pasta in a large pot of generously salted boiling water until al dente; add broccoli rabe 2 minutes before pasta is done. Reserve 1 cup pasta water; drain pasta and broccoli rabe.
  • Combine oil, garlic, and red-pepper flakes in pot over medium. Cook, stirring, until garlic is just softened, about 2 minutes. Add pasta, broccoli rabe, and cheese to pot; toss to coat. Add reserved pasta water, a little at a time, until sauce evenly coats pasta. Gently fold in salmon. Serve, with more cheese and red-pepper flakes and a drizzle of oil.

SPAGHETTI WITH SALMON TWO WAYS

To dress pasta? Olive oil, of course. But that was until I tried a generously buttered spaghetti at Arakataka restaurant in Oslo. Only after I unwound the disarmingly simple knot of fresh pasta strands tossed with butter and crowned with fish roe did the sumptuous complexity of flavors start to bloom. This was a dish I knew I would try to replicate at home. The challenge was the roe. The restaurant used lojrom, also called bleak roe, a fairly fine-grained roe that is popular in Scandinavia but hard to find in the United States. Other roes, like golden whitefish, trout and salmon, may be substituted. For a somewhat more substantial preparation, I added some hot-smoked salmon, ripe tomato and a hint of lemon.

Spaghetti With Salmon Two Ways image

Steps:

  • Bring a large pot of salted water to a boil for the pasta. While water is heating, melt butter in a 3-quart saucepan over low heat. Add lemon zest to butter and cook about 90 seconds, until the lemon is fragrant. Do not allow butter to brown. Remove from heat. Add tomato and salmon to the pan and stir briefly. Fold in mint.
  • When water boils, add pasta and cook until al dente, about 5 minutes. Drain, then place pasta in the pot with the salmon and gently fold ingredients together. Season generously with pepper and, if needed, salt.
  • Divide pasta among 2 or 3 shallow plates. Top each portion with roe and serve.

  • In a large pot of boiling salted water, cook pasta according to package directions -- until al dente; drain well.

  • Heat a nonstick frying pan over high heat. Add the salmon, skin-side down, and cook until the skin is crispy and golden (approximately 3-4 minutes).
