SAND PASTA--JUST FOR KIDS
This sounds very strange but is quite good and the kids get a laugh out of the name. I even like it. I have listed the ingredients as best I could. I usually add everything to the pan in the amounts that I like, but I needed measurements, so this is what I came up with. You may add more or less of each.

Steps:
- Cook the spaghetti and while cooking prepare the rest.
- Put the olive oil in a fry pan.
- Add the bread crumbs and rest of ingredients.
- Mix well; should look like wet sand--if not add a little more of whatever you think you need to make it look like that.
- Toss the warm sand with the pasta.
- Sprinkle with cheese.

Steps:
- Cook pasta according to directions on pkg.
- Sautee garlic in oil.
- Add red pepper flakes,salt, and bread crumbs/mix well.
- Add to cooked and drained pasta.
- Sprinkle with plenty of parmesean cheese.
PASTA WITH SUN-DRIED TOMATOES
Steps:
- Cook the pasta in a large pot of boiling salted water with a splash of oil to keep it from sticking together. Boil for 12 minutes, or according to the directions on the package. Drain well and allow to cool. Place the pasta in a bowl and add the tomatoes, olives, mozzarella, and chopped sun-dried tomatoes.
- For the dressing, combine the sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt, and pepper in a food processor until almost smooth.
- Pour the dressing over the pasta, sprinkle with the Parmesan and basil, and toss well.
PASTA WITH CLAMS, WHITE WINE AND SPICY ITALIAN SAUSAGE
Steps:
- Preheat the oven to 350 degrees F.
- Place the clams in a large bowl and cover with cool tap water. Salt the water well and let the clams sit for 20 minutes to an hour to purge them of sand and grit. Drain and scrub the shells well under cold running water.
- Set a large roasting pan across two burners. Heat the olive oil over medium-high heat. Add the onions and garlic and saute for 2 to 3 minutes, or until softened. Add the chile, fennel and sausage, and cook for 3 to 4 minutes, stirring occasionally to break up the sausage.
- Once the sausage is nicely browned, deglaze the pan with the white wine. Add the clams and stir everything together until well combined. Arrange the tomatoes on top, add the thyme, and sprinkle with salt and pepper. Transfer the pan to the oven and cook until the clams pop open and the cherry tomatoes are roasted and juicy, 10 to 12 minutes.
- Meanwhile, in a large pot of boiling, salted water, cook the linguine until al dente. When the clams are done, return the roasting pan to the stovetop over high heat. Simmer to reduce excess liquid and to open any clams that are still closed (stirring vigorously with a wooden spoon also helps).
- Taste sauce and season with salt as needed.
- Drain the pasta and transfer it directly into the roasting pan. Add the butter, lemon zest and juice, and the parsley. With tongs, toss everything together to coat the pasta in the sauce.
- Serve topped with plenty of grated pecorino if using.
PASTA WITH ROASTED VEGETABLES AND CREAM CHEESE
I was trying to make something easy for dinner and use up some things in the fridge. This is what I came up with and it actually turned out pretty well.

Steps:
- Slice peppers, onion and carrots.
- Toss with garlic, olive oil, salt, pepper and basil.
- Roast in a 375 degree oven for 45 min.
- Remove and set aside to cool.
- Boil pasta until al dente, drain (reserve 1/4 cup cooking water), set aside.
- In a large pan, melt butter, add bacon and cook until browned - 6 minutes or so.
- Add cream cheese, cream and roasted vegetables, stir until cream cheese is almost melted.
- Add pasta and parmesan.
- Stir together.
RICH PASTA FOR THE POOR KITCHEN
A quick, simple pasta tossed with butter, parsley, and Parmesan cheese. A wonderful recipe to make when you don't feel like making a trip to the grocery store. I used what I had on hand and it worked like a charm! Add summer vine-ripened tomatoes for an extra dash of flavor!

- Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain.
- Heat a skillet over medium-low heat. Melt butter with garlic very slowly to avoid burning the garlic. Season with salt, freshly ground black pepper, and parsley. Sprinkle with cayenne pepper to taste, if desired.
- Toss pasta into the skillet until well-coated with butter. Increase heat to medium, and cook until pasta is heated through and has absorbed some of the butter. Adjust seasoning with salt and pepper, if necessary. Serve with grated Parmesan cheese.

SPAGHETTINI WITH PEPPERS AND SAND
I've served this at several occasions and it has always been a hit. (It's very similar to the "pasta with sand" recipe elsewhere on Recipezaar.) Recipe is from Jeff Smith's "Frugal Gourmet Cooks Italian."

Steps:
- Place a large pot of water on to boil for the pasta.
- Remove core and seeds from pepper and slice thinly--julienne style.
- Heat a large frying pan and add 2 tablespoons of the oil.
- Add the pepper and saute over high heat for two minutes.
- The peppers should remain a little crisp.
- Remove from the pan and set aside uncovered.
- Heat the frying pan again and add the remaining oil and the garlic.
- Saute just a few seconds.
- Add the bread crumbs and red pepper flakes.
- Gently toast the mixture, stirring often, until very lighly browned.
- Boil the pasta until al dente and drain well.
- Return to the pot and toss with the red bell pepper and the bread crumbs.
- Salt and pepper to taste if desired.
- NOTE ON DOUBLING: I have had some difficulty doubling this recipe easily.
- It works, but you need to tweak the preparation a bit.
- First, I'd recommend toasting the breadcrumb mixture in two batches (1/4 cup at a time).
- It can also be difficult to toss the pasta evenly, so I'd start with a 1/3 of the pasta, add a third of the breadcrumb mixture and then add the second third and so forth.
- You may need to add a little extra olive oil as well.

MIDNIGHT PASTA WITH ANCHOVIES, GARLIC AND TOMATO
Tomato paste gives this speedy midnight pasta, studded with anchovy and garlic, its color and umami. If you're not an anchovy fan, you can substitute a few tablespoons of chopped capers or olives. Be generous when adding the pasta water to the pan. The mixture should look soupy at first, but the sauce will thicken up as you toss.

- Bring a large pot of well-salted water to a boil over high heat. Add pasta and cook, according to package directions, until about 2 minutes shy of al dente so the pasta can finish cooking in the sauce. It should still have a slight crunch in the center. Reserve 1 cup of the pasta cooking water, then drain the pasta.
- While the pasta is cooking, in a large skillet, combine the oil, garlic, anchovies (if using), red-pepper flakes and pinch of salt over low heat. Cook until garlic is opaque and a few of the slices are pale gold at the edges (don't let the garlic turn brown), 2 to 5 minutes. Add tomato paste and cook until it darkens, about 1 minute longer.
- Add the drained pasta, lemon zest and 1/3 cup of the reserved pasta water to skillet. Stir until the pasta is al dente and well coated with sauce. Add more pasta water, if needed, until the sauce is glossy and the pasta cooked to taste.
- Cut the zested lemon half in half (so you'll have a quarter of a lemon) and squeeze some juice into pasta. Stir in herbs and taste, adding more lemon juice and salt, if needed. Cut remaining lemon into wedges and serve it alongside the pasta, which should be garnished with more herbs and red-pepper flakes, a drizzle of oil and a generous sprinkle of cheese, if you like.

- In a medium sized bowl, combine flour and salt. Make a well in the flour, add the slightly beaten egg, and mix. Mixture should form a stiff dough. If needed, stir in 1 to 2 tablespoons water.
- On a lightly floured surface, knead dough for about 3 to 4 minutes. With a pasta machine or by hand roll dough out to desired thinness. Use machine or knife to cut into strips of desired width.
