SPANISH GARLIC SHRIMP (GAMBAS AL AJILLO)
Every Spanish restaurant serves this dish of shrimp cloaked in garlic-infused olive oil with smoky hints of paprika and a touch of sweetness from sherry. Make sure you have all your ingredients together before you head to the stove since, start to finish, this cooks in mere minutes. It's great for a tapas party, since you can prep everything ahead of time. Just spoon the shrimp and sauce over toasted bread and sprinkle more cayenne and parsley on top to enjoy.

Steps:
- Slice garlic thinly. Season shrimp with kosher salt and paprika. Mix to coat.
- Heat garlic and oil in a skillet over medium heat. Cook until garlic starts to turn golden, about 2 minutes. Add shrimp and increase heat to high. Toss and turn shrimp with tongs until starting to curl but still undercooked, about 2 minutes. Pour in sherry. Cook, stirring continuously, until sauce comes up to a boil and shrimp is cooked through, about 1 minute more. Remove from heat. Stir in parsley with a spoon.

ONE-POT SPANISH-STYLE SHRIMP AND CHORIZO PASTA
Fideos are very thin noodles that are traditionally cooked right in the sauce, allowing them to soak up maximum flavor. Both angel hair pasta and capellini are great substitutes if you don't have access to Spanish fideos. To create a nutty, smoky layer, the noodles are first toasted with olive oil and chorizo. A good-quality bottled clam juice is important here, since it creates the briny broth that accentuates the shrimp and enhances the overall seafood flavor; the Bar Harbour brand has a very clean and naturally briny clam flavor.

- Heat oil in a large Dutch oven over medium heat. Add onion and pasta, season with salt and pepper and cook over moderate heat, stirring, until pasta starts to turn golden, about 5 minutes (pasta will break up a bit during stirring).
- Lower heat and add garlic, tomato paste and chorizo, and cook until tomato paste is lightly caramelized, 2 to 3 minutes. Add fennel, clam juice and 1 cup of water and season with salt and pepper. Bring to a boil, cover and simmer over moderate heat until pasta has softened and most of the liquid is absorbed, about 5 minutes.
- Stir in shrimp, peas and Parmesan, cover and cook until shrimp is opaque, about 3 to 4 minutes. Stir in lemon juice and parsley.
- Drizzle with oil and serve with lemon wedges.

I adapted this recipe from one I found online for Garlic Shrimp tapas. I like it with pasta and used it to create an oil based pasta sauce. I love Parmesan and will add endless amounts to my pasta dishes, add to your taste.

Steps:
- Cook pasta and set aside.
- Combine parsley and garlic. Sprinkle salt and pepper on mix.
- Combine lemon juice, sherry and paprika and set aside.
- In medium sized saucepan or wok, heat olive oil on medium heat and add red pepper flakes to infuse oil. Approximately 1 minute. (reduce heat if it starts to burn).
- Add parsley and garlic mixture. Allow garlic to cook and not burn.
- Add lemon juice, sherry and paprika mixture. Allow to rollling boil.
- Add shrimp (with shells). Once cooked through when pink, remove from heat, add pasta. Mix. Add Parmesan and mix. Allow the Parmesan to melt.
- Serve with grated fresh Parmesan.

- Bring pot of water to boil with 1 tablespoon oil and salt. Add the spaghetti and stir occasionally with fork. Cook until tender, but still firm. Drain, return to pot, mix in another tablespoon oil, and keep warm.
- Heat the last tablespoon of oil in skillet and add the garlic. Just as the garlic starts to turn color, add the shrimp. Stir for about 2 minutes until the shrimps turn pink. Add the lemon juice, broth, red pepper, parsley and dash of salt. Cook for one more minute. Mix in noodles and serve once noddles are hot.

- Pour the olive oil into a heatproof earthenware ramekin. Heat the ramekin on a hob until hot.
- Add the garlic and chilli and cook, stirring often, until the garlic is fragrant. Take care not to let the garlic burn,

- Heat a well-seasoned cast iron skillet over medium-high heat.
- Roast the tomatoes, onion, and jalapenos, until nicely browned on all sides, turned frequently.
- Note: you may get a lot of smoke from this so you might want to open a window.
- Transfer roasted vegetables to a metal bowl and cover with plastic wrap; allow to sweat and cool.
- When cool, peel the skins and discard.
- Remove any scorched areas from the onion by rubbing with paper towels.
- For a milder dish, seed the jalapenos, or otherwise, keep the fire dept.

- Season to taste with salt and pepper.
- Stir in the shrimp.
- Simmer on medium-low heat until the shrimp are pink, about 3-5 minutes.
- Adjust seasonings, and remove from heat.
- Spoon shrimp and sauce into a serving dish; top with chopped cilantro, and squeeze lime juice over all.
- Serve.
- And keep the phone number handy if you left those seeds in.

- Cook the pasta in salted boiling water according to package (about 9 minutes). Reserve a little bit of the starchy pasta cooking water. Drain the pasta well.
- While the pasta is cooking, cook the shrimp. In a large pan heat 1 tablespoon extra virgin olive oil over medium-high heat until the oil is shimmering but not smoking. Cook the shrimp on each side for 2 to 3 minutes until it turns pink. Transfer the shrimp to a side plate for now.

- Add the chopped parsley and tomatoes, toss about for about 30 to 40 seconds. Season with Kosher salt.
