CHINESE WONTONS

These appetizers disappear quickly! They are also great dipped in a mixture of soy sauce and Worcestershire sauce.

Chinese Wontons image

Steps:

  • Combine pork, garlic, ginger, soy sauce, sesame oil, and vegetables in a bowl.
  • Separate wonton skins.
  • Place a heaping teaspoon of filling in the center of the wonton.
  • Brush water on 2 borders of the skin, covering 1/4 inch from the edge.
  • Fold skin over to form a triangle, sealing edges.
  • Pinch the two long outside points together.
  • Heat oil to 450 degrees and fry 4 to 5 at a time until golden.
  • Drain and serve with sauce.

1 lb ground pork
3 chopped garlic cloves
1 teaspoon grated fresh ginger
1 tablespoon soy sauce
1 teaspoon sesame oil
3 carrots, finely diced
3 stalks celery, finely diced
6 green onions, finely diced
1 (12 ounce) package wonton wrappers
water
oil (for deep frying)
your favorite sweet and sour sauce

Simple and Delicious! You will be able to throw these together quickly and be the hit of the party with these babies! Serve with sweet and sour sauce, duck sauce or Chinese Hot Mustard.

Easy Chinese Wontons image

Steps:

  • Mix pork, green onions, garlic, wok oil, soy sauce, salt together. (adjust amounts to personal taste).
  • Wet edges of each wonton wrapper and place a spoonful of the pork mixture in the center. (work one at a time).
  • Heat the oil for cooking to at least 350 degrees. (To see if the oil is ready, drop a wonton in and if it starts to bubble you are set to go!).
  • Fry to golden brown.
  • Serve with dipping sauces. (Sweet and Sour, duck sauce or Hot mustard).

  • Assemble the wontons. Take each wrapper, and dampen the outer edges with a thin layer of water. Place a teaspoon of the cream cheese filling in the middle, and fold in half into a triangle. Bring the two corners on the long side of the triangle together, and seal with another dab of water. Continue until all the wontons are assembled.
  • Heat a couple inches of vegetable oil in a small pot until it reaches 375 degrees F. Fry the wontons in batches––about 2 minutes per batch––until golden brown. Definitely use a small pot for this and fry in multiple batches; you’ll use much less oil!

  • Start by making the filling. Simply combine the ground pork, chopped scallions, sesame oil, soy sauce, wine (or sherry), sugar, oil, water, and white pepper in a bowl. Whip everything together by hand for 5 minutes or in a food processor for 1 minute. You want the pork to look a bit like a paste.
  • To make the wontons, take a wrapper, and add about a teaspoon of filling. Overstuffed wontons will pop open during the cooking process and make a mess. Use your finger to coat the edges with a little water (this helps the two sides seal together).
  • Fold the wrapper in half into a rectangle, and press the two sides together so you get a firm seal. Hold the bottom two corners of the little rectangle you just made, and bring the two corners together, pressing firmly to seal. (Use a little water to make sure it sticks.)

  • Start by thoroughly washing the vegetables. Bring a large pot of water to a boil and blanch the vegetables just until wilted, about 60-90 seconds. Drain and rinse in cold water.
  • Grab a good clump of veg and carefully squeeze out as much water as you can. Very finely chop the vegetables (you can also speed up the process by throwing them in the food processor). Repeat until all the vegetables are chopped.
  • In a medium bowl, add the finely chopped vegetables, ground pork, 2 1/2 tablespoons sesame oil, pinch of white pepper, 1 tablespoon soy sauce, 1/2 teaspoon salt, and 1-2 tablespoons Shaoxing wine. Mix very thoroughly until the mixture is totally emulsified—almost like a paste.
  • Now it’s time to assemble! Fill a small bowl with water. Grab a wrapper and use your finger to moisten the edges of the wrapper. Add a little over a teaspoon of filling to the middle. Fold the wrapper in half and press the two sides together so you get a firm seal.
