PEA SHOOTS (STIR-FRIED PEA SHOOTS -- CHOW DAU MIU)
Pea shoots are the tips of the vines and the top set of leaves of the pea plant. I was introduced to these by my BIL a couple of years ago. I found no recipes for it here or on line. Which lead me to add my recipe.

Steps:
- Rinse the pea shoots thoroughly in cold water twice, lightly drain.
- In a large wok or skillet over high heat, heat oils add ginger, garlic and sugar. Toss and add shoots, soy, & oyster sauce.
- Stir-fry for two to three minutes, or until the leaves soften and are tender. Remove shoots leaving the liquid in pan. Place shoots on serving dish. Reduce the remaining liquid by 1/2. Pour over shoots and serve immediately.
PASTA WITH PEAS AND MINT
Other than snap peas, you could use Chinese pea pods or pea shoots or the wonderful frozen green pea, they all taste great.

Steps:
- In a 5 quart pan, bring 2 or 3 quarts water to a boil.
- Clean stem ends and strings from peas.
- Rinse and drain.
- When water boils, add pasta, pushing it down into the water.
- Cook until almost tender to bite, about 3 minutes.
- Add peas and cook until they turn bright green, about 2 minutes.
- Drain peas and pasta through a colander.
- In a large pan, combine garlic and butter over high heat, stirring until butter melts.
- Add peas and pasta and mix until pasta stops sizzling, about 1 minute.
- Add about 2 t.
- of the lemon zest, 2 T.
- of the lemon juice, and about 1 T.
- of the mint to the pan, mix.
- Serve the pasta mix in wide pasta bowls, swirling to make a well in the center.
- Spoon creme fraiche into the centre of the bowls and sprinkle with remining peel, mint, and juice.
- Add salt and fresh ground pepper to taste.

Pea shoots are the tender, young first growth, usually of snow peas. They are more likely to be found in early spring at your farmers market.

Steps:
- Bring 2 quarts of salted water to a boil; prepare and ice water bath.
- Add shrimp and cook until opaque, about 2 minutes; place in the ice water bath for 5 minutes, then peel, and transfer to a bowl.
- Cook bacon in a large skillet, over medium high heat, stirring often, until crisp, 8 to 10 minutes; remove with a slotted spoon and drain on paper toweling.
- Add shallots to skillet and cook until just softened, about 1 or 2 minutes; whisk in vinegar, mustard, sugar, salt and pepper.
- Add pea shoots, season with salt and pepper, and toss to combine.
- To serve: Transfer pea shoots to a serving bowl, top with shrimp, and sprinkle with crumbled bacon, chives, and tarragon.

- Rinse the bamboo shoots under running water. Drain.
- Stir fry the shoots and pork in the oil over medium heat for 10 minutes, or until the bamboo is tender.

SICHUAN PEA SHOOTS
This aromatic side dish would be welcome alongside almost anything off the grill. For an even more authentic taste, add 1/2 teaspoon Sichuan peppercorns. To turn this dish into a main course, stir-fry 1/2 pound medium peeled and deveined shrimp for 3 minutes before adding the pea shoots - serve it over cooked brown rice.

- Heat a 12-to 14-inch wok over high. Add 1 tablespoon oil, and swirl to coat (oil should be very fragrant). Add 3 garlic cloves, and stir-fry until blistered in spots, about 30 seconds. Quickly add 2 teaspoons doenjang, half of the pea sprouts, and 1 tablespoon wine. Working quickly to prevent burning, stir-fry until pea sprouts reduce to about one-fourth of their original volume and become crisp-tender, 45 seconds to 1 minute. Transfer to a serving platter. Do not wipe wok clean.
- Repeat procedure with remaining oil, garlic, doenjang, pea sprouts, and wine. Serve immediately.

- Snip or break with your fingers, pea shoots into bite-sized segments, roughly 1-inch in length. Wash thoroughly, drain, and set aside.
- Heat up a wok over high heat. When wok is smoking hot, add oil. When oil is very hot, add chopped garlic and fry for 10 to 15 seconds until fragrant. Add pea shoots all at once, and toss lightly for 20 seconds, then add chicken seasoning, salt, and Chinese wine (optional). Add a little hot water, if you like, (the steam generated when it hits the hot wok will help to quickly cook the pea shoots), and continue to stir fry for 1 minute, or until the shoots are slightly wilted, but still bright green.
- Transfer to a serving plate or dish, leaving behind some, or most of the juices, if you wish. Serve immediately.
