PEACH MONKEY BREAD

This is an easy and delicious recipe that can be used for breakfast, brunch or just a comfort food. My family loves it, I hope you do too!

Steps:

  • In a mixing bowl combine the peach jam, honey, and nuts. Stir in melted butter and set aside.
  • cut each biscuit into quarters. Layer half of the pieces in a 9 inch pie tin. spread 1/2 of the peach jam over the biscuits. place the remaining biscuit pieces on top and spread with the rest of the jam.
  • Bake at 350 for 25 to 30 min until golden brown. Invert onto a serving plate. Just a note: You can use any type of jam you want to in this recipe.

I love when fresh peaches are in season! This recipe is sweet from the ripe peaches with a slight tang from the whiskey. This is a perfect after-dinner treat, but it's just as good with your morning coffee. It also makes a welcome gift for neighbors and friends. -Anne Ormond, Dover, New Hampshire

Steps:

  • Preheat oven to 350°. In a large bowl, whisk flour, brown sugar and baking soda. In another bowl, whisk eggs, sour cream, oil and whiskey until blended. Add to flour mixture; stir just until moistened. Fold in peaches and pecans. , Transfer to a greased 8x4-in. loaf pan. Bake until a toothpick inserted in center comes out clean, 60-65 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely. Combine glaze ingredients; drizzle over cooled bread. Let stand until set., Freeze option: Securely wrap cooled loaf in foil, then freeze. To use, thaw at room temperature.

  • Heat the milk in a small saucepan over medium heat until little bubbles begin to form around the outer edge. Remove from the heat and let stand until cooled to room temperature. Meanwhile, sprinkle the active dry yeast into the warm water in the mixing bowl of your stand mixer. Let stand for 5 minutes. It should become bubbly and foamy.
  • Add in the sugar, eggs and melted butter. Mix on low speed and then pour in the milk. Gradually mix in your flour and salt mixture on low speed, scraping down the sides of the bowl as needed, until everything is combined.
  • Turn your dough onto a lightly floured work surface and knead the dough for about 10 minutes, adding more flour if the dough is too sticky to work with. Grease a large bowl and place the dough into the bowl. Cover with plastic wrap and a kitchen towel (over the plastic wrap) and place in a warm spot until doubled in size, about 1 1/2 hours.
  • When your dough is about ready, prep your ingredients for the dough balls. Melt the butter and mix the sugar and cinnamon in a medium to large sized bowl. Lastly, spray your bundt pan with non-stick baking spray and set aside. Preheat oven to 350 F.
