Steps:
- In a large bowl, combine flour, salt, and sugar.
- Add the coconut oil to the dry ingredients and mix together using a fork or your fingers.
- Add the cold water to the dough, a little at a time, and continue to mix until dough forms a ball.
- Cut dough into two equal parts and flatten them into 1-inch (2 ½ cm) thick disks. Wrap the disks in plastic wrap and chill for one hour.
- Add the peach preserves and butter to a small microwave-safe bowl and heat in the microwave for about 20 seconds or until butter has melted. Stir to combine.
- Dice the peaches and put them in a medium bowl.
- Add the preserve mixture, lemon juice, and cinnamon to the peaches and mix until peaches are well-coated.
- Remove one of the dough disks from the refrigerator.
- Lightly flour your work surface, dough, and rolling pin.
- Roll out the dough to form a large rectangle about ⅛-inch (3 mm) thick.
- Preheat oven to 375°F (190°C).
- Cut the dough into an even number of small rectangles.
- Beat the egg in a small bowl. Brush the edges of half of the rectangles with the egg wash.
- Spoon one tablespoon of the peach mixture into the center of each brushed rectangle.
- Place another rectangle of the same size over the one with the filling. Lightly press down.
- Use a fork to seal the edges around each rectangle, then lightly poke the tops of each rectangle a few times. Brush the edges and tops of the dough with the egg wash.
- Place the pockets on parchment-lined baking sheets and place in the freezer as you repeat the same process with the other dough disk.
- Bake for 30-35 minutes or until dough is golden brown.
- For the glaze, mix together powdered sugar and milk until smooth.
- Drizzle peach pockets with glaze and serve.
- Enjoy!

TACO POCKETS
This recipe is sponsored by Target. Taco night is the best night of the week, and this recipe makes it better than ever! Two delicious (and easy) fillings get stuffed into tortilla pockets and baked to a golden crunch. The chicken filling gets a burst of flavor from marinating in bright salsa verde and chickpeas stand in for meat when simmered with a traditional taco seasoning. Peppers and onions lend a fajita-like flavor, and everything comes together when served with plenty of tasty options for dipping.

Steps:
- Combine the chicken and salsa in a medium bowl and toss to coat. Cover and refrigerate for 30 minutes.
- Preheat the oven to 425 degrees F. Generously spray a baking sheet with cooking spray; set aside.
- Combine the chickpeas, taco seasoning and 3/4 cup water in a medium saucepan. Bring to a boil over medium heat and let simmer until thickened, about 3 minutes. Remove from the heat and smash about half of the chickpeas with the back of a spoon; set aside.
- Heat 1 tablespoon of the oil in a medium skillet over medium-high heat until shimmering. Add the peppers and onions, season with a pinch of salt and cook, stirring often and lowering the heat if needed so the vegetables don't brown, until softened, about 6 minutes.
- Transfer the vegetable mixture to a plate and return the skillet to medium-high heat. Add the remaining tablespoon oil to the skillet and heat until the oil shimmers. Add the chicken and cook, stirring occasionally, until cooked through, about 5 minutes.
- Remove the chicken from the heat and fold in the cheese and half the vegetable mixture. Fold the remaining vegetable mixture into the chickpeas along with the cilantro, jalapeños and avocado. Taste both mixtures and season with more salt if needed.
- Combine the flour and 3 tablespoons water in a small bowl to create a paste that is the same consistency as glue, adding more water if needed. Halve the tortillas and cover them with a damp towel. Using the back of a spoon, spread a line of the flour mixture on the cut edge of a tortilla half. Fold the opposite ends of the tortilla half up and over, overlapping slightly to form a cone. Pinch gently to seal. Cover with a damp cloth and repeat with the remaining tortillas.
- Fill a cone with 1/3 cup of the chicken mixture. Spread some of the flour mixture along the inside edge of the top of the cone, then pinch the two sides together to seal the pocket. Place on the prepared baking sheet seam-side down and repeat with the remaining cones, chicken mixture and chickpea mixture. (You should have 6 of each filling.)
- Spray the pockets lightly with cooking spray. Bake, flipping the pockets once about halfway through, until golden and heated through, 15 to 20 minutes. Serve the pockets with sour cream, guacamole, hot sauce, lime wedges and more salsa.
PEACH AND BLUEBERRY PASTRY POCKET WITH VANILLA GLAZE AND CANDIED ALMONDS

Time 1h30m
Yield 8 pastry pockets
Number Of Ingredients 22
Steps:
- For the pastry pocket: To the bowl of a food processor, add the cream cheese, flour, butter, 1/2 teaspoon kosher salt and 1 tablespoon of the granulated sugar. Pulse to combine until it's the consistency of grated Parmesan cheese. Add the egg yolk and 1 tablespoon of water. Pulse until the dough just comes together. Turn out the dough onto a floured work surface and gently knead into a large disc. Roll the dough into a circle about 1/4 inch thick. Transfer the dough to a sheet tray and cover with plastic wrap, then place in the refrigerator to chill for at least 20 minutes.
- Preheat the oven to 425 degrees F.
- Set up an ice bath and generously season with kosher salt (it keeps the water cold!). Add the blueberries, peaches and cornstarch to a medium saucepan. Stir to combine, making sure all of the fruit is coated with the cornstarch. Add the cinnamon, thyme bundle, lemon zest and juice, remaining 1/2 cup granulated sugar and 2 tablespoons of water. Bring to a boil, then reduce to a simmer and cook until thickened, about 10 minutes. Remove the thyme bundle and discard. Transfer the peach and blueberry mixture to a bowl, place over the ice bath and stir to cool down.
- Whisk the whole egg with 1 teaspoon of water to create an egg wash. Place the dough on a floured work surface. Roll out the dough to 1/8 inch thick. Using a 5-inch ring cutter, punch out 8 circles and place on a parchment-lined sheet tray. Brush the edges of one half of each circle with the egg wash. Add 2 tablespoons of filling into the center of each circle, then fold the dough over to create a half moon. Press the edges with your fingers to secure the seam tightly. Crimp the edges using a fork. Make 3 small slits in the top of each pastry pocket with a paring knife.
- Bake, turning the tray halfway through cooking, until golden brown, 15 to 17 minutes. Set the pastry pockets on a sheet tray lined with a rack to cool.
- For the glaze: Sift the powdered sugar using a hand strainer into a large bowl. Add the milk, vanilla extract and lemon juice and whisk to combine. The consistency should be on the thinner side, but still have a slow flow when drizzled with a spoon.
- Spoon the glaze over both sides of the pastry pockets. Garnish with chopped Candied Almonds and flaky sea salt.
- Preheat the oven to 325 degrees F. Line a sheet tray with parchment paper.
- Place the egg white into a large bowl with 1 teaspoon of water. Whisk vigorously until it's foamy, frothy and white. Add the granulated sugar and kosher salt and whisk to combine. Fold in the sliced almonds. Spread the almond mixture onto the sheet tray. Bake, giving it a toss halfway through, until golden, about 15 minutes.
PEAR POCKETS
My kids and I made up this recipe one day for lunch. The juxtaposition of the Cheddar, pears, and peanut butter is yummy and decently healthy for kids. I'm sure there are a dozen variations that would be equally delicious and quick, but this is what we had on hand that day!
