SUGAR-FREE, GLUTEN-FREE, DAIRY-FREE PEACH COBBLER
Both my grandmothers made peach cobblers to die for: cake, crusted sugar, and peaches. Peaches in Florida were always perfectly ripened--the loose stone variety--juicy and tender. This is a reconstruction free of allergens. It's quite sweet if you have avoided sugar for a while but it's PERFECT for those just making the change. You can't even tell that this is sugar free. * A word on xylitol and erythritol. Some folks with IBS cannot that tolerate xylitol can usually use erythritol. Unlike maltitol or other sugar alcohols, xylitol is naturally derived from birch trees in a distillation process similar to soy sauce. So, if you don't have an issue with distillation (and those of you who drink any distilled alcohol or partake of soy sauce should not), then xylitol is a pretty cool sweetener. Truvia is pricier but a great choice for those with IBS. It's a blend of the stevia leaf and erythritol, another plant-derived sugar alcohol. Why do you care? Well...other sugar substitutes (Splenda, Equal, maltitol) are completely artificial and have various known and suspected negative health effects. ** For celiacs, I learned that many buckwheat flours are prepared on shared machines with gluten-containing grains. Run raw buckwheat kernals through a grain grinder or food processor to assure yourself of truly gluten-free flour.

Steps:
- ~Preheat your oven to 350 degrees F. Spray your baking pan with nonstick spray. ~Place the diced peaches into the baking pan first, evenly spread out. Next, dollop ½ cup of the applesauce over the peaches. Then, pour ½ cup of the evaporated milk over the peaches. Then, sprinkle on ½ tsp of the cinnamon. Sprinkle the cake mix over the peaches in an even layer. Dollop the rest of the applesauce and evaporated milk over the top of the cake. Sprinkle on the rest of the cinnamon. Drizzle the coconut oil over the top of the cake. Use a spatula to carefully spread the ingredients so the entire top of the cake is moist and no dry cake mix is exposed. ~Bake for 30-40 min or until golden brown and bubbling. Remove from oven and let cool before serving. Enjoy! TIP: If you want to make a full 9×13" cake, double the ingredients and use a full box of cake mix! Enjoy!
FRESH PEACH CAKE (GLUTEN FREE)
This is not too sweet a cake and would go lovely along side a cup of tea. "When Portuguese soldiers conquered South America from the Aztecs and Inca in the 1500's AD, they brought peaches with them, and people began to grow peaches in South America. In the 1600's, Spanish settlers also brought peaches to Florida, where the Cherokee and Iroquois soon learned to grow them. Cherokee and Iroquois traders sold peach seeds further west, and peach seeds gradually crossed North America to meet up with peach trees planted by Spanish settlers in Arizona and California." GLUTEN-FREE PEACH COBBLER
A gluten-free peach cobbler that tastes just as delicious as the regular version. I have been trying different versions, and this seems to be the best.

GLUTEN FREE PEACH CAKE
I made this cake for a teatime treat last Sunday, not really knowing how it would turn out, but I was so pleased with how it looked and more importantly how it tasted - it was a big hit and I will definitely be making it again! I made it with a pack of 6 donut peaches, but i'm sure ordinary peaches would work just as well. Here it is:-

Steps:
- Heat the oven to 180.c and line a 2lb loaf tin with baking parchment - I use loaf tin cases as it saves a lot of hassle crimping and creasing.
- In a large bowl place the flour, butter, sugar, eggs and vanilla extract and beat with an electric whisk until pale and creamy.
- Add the peach chunks and fold into the mixture.
- Spoon the mixture into your pre-lined loaf tin and bake in the oven for approximately 1 hour until golden on top and a skewer comes out clean.
- Meanwhile in a separate bowl add the lemon zest and juice, sugar and peach slices and leave to marinate - the sugar will dissolve to create a syrup.
- When the cake comes out of the oven, poke a few holes in the top with a skewer and arrange the marinated peach slices on top, spooning over some of the syrup as you go to give a nice glaze on the top of the cake.
- You can leave the cake in the tin until completely cool, and then remove and cut into 8 slices. Enjoy....
