- Combine peaches and schnapps, mashing a bit. Set aside.
- Cook 1/2 cup cream and sugar over low heat until the sugar is melted. Remove from heat and pour over peaches along with the remaining cream. Refrigerate until well chilled.
- Freeze in an ice cream maker according to manufacturer.

- Wash peaches, quarter them and remove pits, and puree in a food processor until fairly smooth. Set aside.
- Whip chilled whipping cream, vanilla and salt until stiff peaks form. Add sweetened condensed milk and mix well to combine.
- Add peach puree and mix well to combine. Pour into a chilled freezer safe container (see Recipe Notes for suggestions) and freeze 3-6 hours - until desired level of firmness is reached.

- Transfer peaches, along with the liquid, into a non-reactive bowl. Stir in the sugar and let the peach mixture cool, uncovered, to room temperature.
- When the peaches have cooled, add the cream, sour cream, vanilla and lemon juice. Puree with an immersion blender until blended but bits of peaches remain.
- Cover and chill the mixture thoroughly in the fridge. (You can put in the freezer towards the end to make it extra cold.)
