Steps:
- Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
- In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
- Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.
CHAFFLES
Chaffles are low-carb waffles, but they can be used in so many ways. You can change the texture by adding some almond or coconut flour, turn them into sandwiches, modify them into a dessert, change the flavor by using different cheese, etc. This is a basic chaffle, and it's delicious for breakfast with a pat of butter and drizzle of sugar-free syrup.

- Preheat a waffle maker.
- Whisk egg in a small bowl and stir in mozzarella cheese.
- Pour 1/2 of the batter onto the preheated waffle maker, spreading it out from the center with a spoon. Close the waffle maker and cook until the steaming stops and the chaffle is well browned, about 3 minutes. Don't overcook, as that will make it chewy. Repeat process with remaining batter.

I've tried for years to duplicate a delicious waffle I ate at a restaurant chain here in the South. This is the closest I've come, and they're crisp and nutty. Butter and maple syrup are my family's favorite toppings. Why not serve them for your holiday brunch? -Susan Jansen, Smyrna, Georgia
