PEANUT BUTTER CRACKLES
These cookies pack the double-whammy of rich creamy peanut butter and mini chocolate chips all in one decadent bite. Recipe developed by Food Network Kitchen.

- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Whisk the flour, baking soda, baking powder and salt in a medium bowl. Beat the butter, brown sugar and peanut butter in a large bowl with a mixer on medium speed until creamy, about 1 minute. Increase the speed to medium high and beat until fluffy, about 2 more minutes. Add the egg and vanilla and beat until combined. Reduce the mixer speed to low; add the flour mixture and beat until well blended. Add the chocolate chips and beat until combined.
- Put the granulated sugar and confectioners¿ sugar in separate small bowls. Roll tablespoonfuls of dough into balls, then roll first in the granulated sugar and then generously in the confectioners' sugar. Arrange 2 inches apart on 2 ungreased baking sheets.
- Bake, switching the pans halfway through, until the cookies are just firm around the edges and cracked on top, 15 to 18 minutes. Let cool 3 minutes on the baking sheets, then transfer to racks to cool completely. Dust the cookies with more confectioners' sugar, if desired.
PEANUT BUTTER MIRACLES
This cookie is my husbands favorite. If you want a real quick cookie recipe, this is the one. Very Yummy!! I prefer to use crunchy peanut butter.

- Preheat the oven to 375 degrees. In a medium mixing bowl, combine the three ingredients until well mixed and the dough is firm. Take a small amount of dough and roll into a ball, about the size of a walnut; arrange the balls on an ungreased baking sheet; Use a fork to press a crisscross pattern on the top; bake for about 7-10 minutes; until the cookies are a light golden color.
PEANUT BUTTER AND MIRACLE WHIP SANDWICH
This is something I used to eat a couple times a week as a kid. Then we used to call Miracle Whip "mayonnaise" (we never liked real mayo.) But now I use the real name since I love real mayo for other things and the 2 could never be confused.

- Roll the dough into 20 small balls, pressing the dough together with your hands. We used a 1 1/2-inch cookie scoop (#40) to make uniform balls. You can also make smaller balls if desired. (If the texture of your nut butter makes the dough very dry, add a little more honey or a few tablespoons milk of choice until you can press it together into a ball shape.) - Line a 9-inch-square pan with foil. In a medium saucepan, stir the sugar with the corn syrup and water. Add the butter and bring to a boil over high heat, stirring to dissolve the sugar. Attach a candy thermometer to the pan and cook over moderately high heat until the caramel reaches 285°, about 10 minutes.
- Meanwhile, in a large heatproof, microwave-safe bowl, combine the peanut butter with the peanuts and salt. Heat the peanut butter mixture in the microwave at high power for about 11/2 minutes, until melted and hot. Stir well.
- In a small bowl, whisk the vanilla with the baking soda. As soon as the caramel reaches 285°, carefully stir in the baking soda mixture; the caramel will foam and bubble up.
- Immediately pour the caramel into the melted peanut butter mixture and, using a heatproof spatula, fold together as quickly as possible. You want the mixtures to be combined but not homogenized; the candy will come together very fast.
