PEAR & BLACKBERRY CRUMBLES
Use pear instead of apple in these individual versions of the classic pud with a crunchy pistachio topping

- Heat oven to 190C/fan 170C/gas 5. Place the pears in a medium-size pan, add the granulated sugar and cook on a medium heat until the fruit starts to soften and releases its juices, about 10 mins. Add the blackberries and bring back to the boil, then remove from the heat. Spoon the fruity mixture into 4 individual ovenproof ramekins, or 1 large baking dish.
- Place the flour, butter and a pinch of salt in a large bowl and rub together with your fingers until the mixture resembles coarse breadcrumbs. Add the pistachios and demerara sugar, then stir to combine.
- Sprinkle crumble evenly over the cooked fruit. This can be done up to 1 day ahead, or frozen for up to 1 month. Bake for 20-25 mins if small, 40 mins if large, until golden. If baking from frozen, add 15 mins cooking time. Remove from the oven, cool slightly, then serve with ice cream, if you like.

POACHED PEARS WITH BLACKBERRIES

- Put the pears in a saucepan with the lemon rind and juice.
- Tip in half the blackberries, the apple juice and the caster sugar. Heat until the mixture bubbles, then cover and cook gently for 20 minutes or until the pears are tender.
- Flip the pears over half way so they cook evenly on both sides.
- Lift the pears from the cooking liquid and cool for a few minutes.
- Slice each one in half and scoop out the cores with the tip of a teaspoon.
- Tip the cooking liquid into a sieve set over a bowl and rub it through, leaving the seeds behind.
- Pour the fruity syrup back into the saucepan, add the rest of the blackberries and reheat gently for a minute to lightly cook them.
- Pour the blackberry sauce over the pears.

BLACKBERRY & PEAR SCRUMBLE

- Put the apples in a pan with the sugar. Cover and cook over a gentle heat until half the fruit is pulpy. Take off the heat, stir in the pears and blackberries and divide between baking dishes, or 10 ramekins or individual pie dishes.
- Heat the oven to 180C/160C fan/gas 4. To make the scrumble, put the flour, butter, sugar, milk and vanilla in a food processor and pulse until it comes together in a scone-like dough. Drop clumps all over the top of the fruit, then sprinkle generously with granulated sugar. Wrap and freeze, or bake for 40-45 mins until the fruit is bubbling and scrumble golden and crisp. Delicious with vanilla ice cream or double cream.
- To cook from frozen: bake at 180C/160C fan/ gas 4 for 1 hour 30 mins.

PEAR AND BLACKBERRY COBBLER
Cobbler is a term often used to describe a baked fruit dessert with a topping - but this is a true cobbler with crunchy biscuit dough dropped on top.

- Heat oven to 375 degrees. Cut pears in half lengthwise; remove stem, core with melon baller, and peel. Slice each half lengthwise into 6 1/2-inch-thick slices and place in a large bowl. Add blackberries, lemon juice, 1/2 cup plus 2 tablespoons granulated sugar, cornstarch, and brandy. Toss gently to combine and transfer to a 3 1/2-quart baking dish.
- In a large bowl, whisk together flour, brown sugar, salt, baking powder, and cinnamon. Using two knives, cut the pieces of butter into flour mixture until it resembles coarse meal. Add the milk and stir with a fork until the dough just comes together. Do not overmix.
- Drop 1/3 cup dough onto the fruit, and repeat, covering the surface of the fruit with "biscuits" that are just touching. Sprinkle the top with remaining 3 teaspoons granulated sugar and bake until golden brown and juices are bubbling rapidly, about 1 hour. Remove from oven and let cool slightly on a wire rack. Serve with cold heavy cream on the side.
BLACKBERRY-PEAR COBBLER

- Preheat oven to 350°F. Butter 2 1/2- quart baking dish with 2-inch-high sides. Gently toss berries, pears, 2/3 cup sugar, wine, peel, and 1/2 teaspoon cinnamon in medium bowl.
- Whisk flour, baking powder, salt, and remaining 3/4 cup sugar in another medium bowl. Add milk, melted butter, and almond extract; whisk until blended. Spread batter in prepared dish. Place berry-pear mixture atop batter (do not stir). Sprinkle with additional cinnamon.
- Bake cobbler until crust is set in center and brown at edges, about 1 hour. Cool 30 minutes. Dust with powdered sugar; serve warm with ice cream, if desired.
- GOOD TO KNOW:
- Why not stir the fruit into the batter? Left undisturbed, the batter puffs up around the fruit during baking, forming a crusty edge.

- Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch springform pan. Combine 1 1/2 tablespoons brown sugar, 1 1/2 tablespoons white sugar, and 1 teaspoon cinnamon in a small bowl; reserve.
- Whisk together flour, 1 teaspoon cinnamon, and baking powder in a large bowl. Use an electric mixer to beat the butter and 1 1/4 cups white sugar together in a separate large bowl. Beat until light and fluffy. Beat in eggs, one at a time. Mix in 1/3 of the flour mixture until just combined. Beat in 1/2 of the milk and another 1/3 of the flour mixture. - Grind first 2 ingredients in processor until lavender is finely chopped. DO AHEAD: Lavender sugar can be made 1 month ahead. Store airtight at room temperature.
- Preheat oven to 425°F. Generously butter large rimmed baking sheet. Toss pears, lemon juice, and 3 tablespoons lavender sugar in large bowl. Transfer pears, 1 cut side down, to baking sheet.
