CINNAMON-ROASTED PECANS AND ALMONDS

This is by far my favorite fall and winter treat to have available, and makes an incredible food gift to anyone without an allergy--for the holidays or any occasion! Store cooled nuts in airtight containers for up to 2 weeks.

Cinnamon-Roasted Pecans and Almonds image

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Beat egg whites with salt in a bowl until frothy; add sugar gradually, beating to stiff peaks. Gently fold in pecans, almonds, and cinnamon. Pour mixture onto a 15 1/2 x 10 1/2-inch jelly roll pan, drizzle melted butter over top, and toss to coat.
  • Bake in the preheated oven, tossing every 10 minutes, until nuts are crisp, about 40 minutes. Serve warm or at room temperature.

Steps:

  • Melt butter in a heavy skillet over medium-high heat, and then add all ingredients and saute for about 2 minutes or until a little crispy, stirring gently so as not to break up the sliced almonds. Serve warm or at room temperature.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix almond flour and 4 tablespoons melted butter together in a small bowl. Press into an ungreased 9-inch pie pan. Chill in the refrigerator while preparing the filling.
  • Combine sweetener, syrup, eggs, 2 tablespoons melted butter, and vanilla in a medium bowl. Stir in pecans. Pour mixture into pie crust.
  • Bake in the preheated oven until filling is set, about 45 minutes.

  • 1. Preheat oven to 250 degrees F. Lightly grese cookie sheet 2. Beat egg white to soft peaks then gradually add sugar & beat until stiff peaks form. Stir in vanilla 7 pecans. Drop monded spoonfuls onto prepared cookie sheet. 3. Bake 1 hour in preheated oven. Turn off heat & keep in oven at least another 30 minutes or til centers are dry.

  • Preheat the oven to 350°F. Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  • In a medium size bowl with a handheld mixer or the bowl of a stand mixer fitted with the paddle attachment, blend the almond flour and butter on low speed until no more clumps remain and a soft dough forms. Turn the mixer off, add the chopped pecans, powdered sugar, salt, baking powder, and vanilla extract. Turn the mixer speed to low again and blend until a soft dough forms.
  • Using a cookie scoop, gently roll the dough into balls and place on the baking sheet. Do not place more than 8 cookies on a baking sheet at a time. Gently press a pecan half into the top of each dough ball, flattening the ball of dough slightly. Bake the cookies for 10 minutes, until the cookies just begin to brown. Remove from the oven and allow to rest on the baking sheet at least 10 minutes before transferring to a wire rack to cool completely. Cookies stay fresh in an airtight container up to 1 week. Baked cookies may be frozen, up to 3 months.
