A fudgy and decadent chocolate brownie topped with a sweet and crunchy layer of pecan pie is a match made in heaven. To ensure the layers stay distinct when these two classic desserts come together, the brownie is baked first then the nut filling is layered over it and baked again. - For the brownie layer: Preheat the oven to 350 degrees F. Line a 9-by-9-inch baking pan with parchment, leaving a 2-inch overhang on 2 sides. Spray the parchment with nonstick cooking spray.
- In the bowl of a stand mixer fitted with the paddle attachment, combine the eggs, cocoa powder, vanilla, salt, baking powder and espresso powder, if using. Beat on medium-low speed until smooth, about 2 minutes.
- Melt the butter in a small saucepan over medium-low heat. Add the sugar and stir until mostly dissolved, 2 to 3 minutes.
- Add the melted butter mixture to the bowl and mix on medium-low speed until the batter is smooth and shiny, about 2 minutes. Reduce the speed to low and carefully add the flour and chocolate chips, mixing until the flour is fully incorporated. Pour the batter into the prepared pan and bake until the brownie layer is cooked through, 32 to 34 minutes.
- For the pecan layer: While the brownie layer is baking, whisk together the brown sugar, corn syrup, melted butter, vanilla, salt, eggs and bourbon, if using, in a medium bowl until well combined and the sugar is dissolved. Add the pecans and stir until the nuts are completely coated.
- Gently pour the pecan mixture over the baked brownie, using a spoon or small offset spatula to carefully spread all the way to the edges. Bake until the pecan pie layer is golden, set and no longer jiggly, 30 to 35 minutes. Let cool completely, about 3 hours, before slicing into 9 squares.

- Spray a large slice tin (would suggest a 9" x 13") with oil and then line with parchment/baking paper and spray again.
- Melt the butter and allow to cool,.
- Stir in the sugar and cocoa until combined.
- Fold through the chocolate chips and pecan nuts.
- Stir in the flour and baking powder until combined.
- Add the eggs one by one and stir until combined.

- Preheat the oven to 350 degrees F. Grease a 9- by 9-inch pan with butter.
- Whisk together the sugar and eggs in a large bowl. Whisk in the butter, cocoa and vanilla. Stir in the flour and salt. Add the chopped semisweet and bittersweet chocolates, bacon and pecans and stir to combine.

BUTTER PECAN CAKE BROWNIES
These are easy and delicious. I have had this recipe for years and not made them very often, but someone brought them to my Mom's on Christmas Eve and everyone went nuts over them. - Preheat oven to 350 degrees. Spread pecans on a rimmed baking sheet; toast until fragrant, 6 to 7 minutes. Let cool, then chop.
- Brush a 9-by-13-inch baking dish with butter, then dust with flour, tapping out excess. In a medium bowl, whisk together flour and salt. In a large bowl, whisk together butter and 2 cups brown sugar until combined. Add eggs; whisk until combined. Add vanilla and rum. - Heat oven to 350 degrees. Lightly butter an 8-inch square metal baking pan and line it with parchment paper, leaving about 2 inches of excess on each side to help you lift the cooked brownies out of the pan.
- Make the brownies: Put butter and chocolate into a medium pot and place it over low heat. - Preheat the oven to 190C/ Gas 5. Butter a 24cm x 34cm baking tin, 6cm deep, and line with greaseproof paper, extending the paper above the rim.
- Melt the butter and chocolate in a heatproof bowl set over a pan of barely simmering water. Stir until smooth, then remove the bowl from the pan and set aside to cool slightly.
- Using an electric mixer, beat the eggs for two minutes, then add the brown sugar and beat until the mixture reaches a ribbon consistency, about 6 minutes. Using a spatula, incorporate into the melted chocolate, but do not overwork. Add the flour and nuts in a steady stream, folding them in with the spatula until evenly mixed; stop mixing at this point.
- Pour the mixture into the prepared tin and immediately place in the oven.
- Cook for 20-25 minutes, lowering the oven setting to 180C/ Gas 4 after ten minutes. To test, insert a skewer or knife tip into the centre; it should come out clean and shiny. Set aside to cool in the tin. Once cooled, lift out the brownie, using the lining paper. Cut into squares or smaller pieces.
