  • Cook penne to desired doneness as directed on package. Drain; cover to keep warm.
  • Meanwhile, brown sausage in large saucepan. Drain; return to saucepan. Add pasta sauce; bring to a boil. Reduce heat to medium-low. Stir in basil and mozzarella cheese. Cook 1 to 2 minutes or until cheese is slightly melted.
  • To serve, spoon sauce mixture over cooked pasta. Sprinkle with Parmesan cheese.

PENNE WITH SAUSAGE IN CREAMY TOMATO SAUCE

This is an easy recipe with tons of flavor, rigatoni pasta can be used in place of penne. If you are using spicy sausages then omit the chili flakes. Try to use only high-quality canned tomato products, it will really make a huge difference in your sauce, no no-name brands for this! With this sauce (and any tomato-based sauce) it needs some time to cook, the longer you cook the sauce uncovered the thicker and richer it will be, you can even start it in the morning turn it off then continue cooking later, cook for even 2 hours!

Penne With Sausage in Creamy Tomato Sauce image

Steps:

  • In a large skillet heat oil over medium heat.
  • Add in the sausage meat; cook breaking up with a spoon until the meat is lightly browned (about 12 minutes) using a slotted spoon remove to a bowl and leave some fat in the skillet.
  • Add in the onion, chili flakes, basil and oregano; saute for about 5 minutes (adding in the garlic the last 2 minutes of cooking).
  • Add in tomato paste and stir 1 minute.
  • Add in the wine and simmer for 6-8 minutes over medium-low heat, or until it almost evaporates.
  • Add in the cooked sausage meat along with the crushed and chopped drained tomatoes.
  • Add in 1 tablespoon salt.
  • Simmer uncovered for about 1-1/2 hours over low heat, stirring with a wooden spoon occasionally.
  • Season with more salt if desired and black pepper.
  • Stir in the cream and heat through over low heat.
  • Just before the sauce if finished cooking, cook the pasta in boiling salted water until just al dente (do not rinse the pasta with water).
  • Serve the sauce with cooked pasta, sprinkle with grated parmesan cheese on top.

Baked Penne with Sausage, Tomato and Cauliflower image

Steps:

  • Preheat the oven to 400 degrees F. Heat the stock with the saffron in a small saucepan over medium heat.
  • Meanwhile, bring 1 1/2 cups water to a boil in a pot and season with salt. Add the cauliflower, cover and steam until tender, about 12 minutes. Drain and break into florets.
  • Heat the EVOO in a Dutch oven over medium-high heat. Add the sausage and crumble it into very small pieces with a potato masher or wooden spoon. Add the garlic and onions and cook for 5 minutes. Deglaze with the wine, stirring and scraping up any browned bits from the bottom of the pot with a wooden spoon. Add the bay leaf, cinnamon stick, tomatoes and saffron stock and stir to break up the tomatoes. Simmer until thickened, about 30 minutes. Discard the bay leaf and cinnamon stick and season with salt and pepper.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook to just shy of al dente, about 7 minutes. Reserve a ladle of the starchy cooking liquid and drain the pasta.
  • Return the pasta to the pot. Add the heavy cream, cauliflower, sausage sauce and

Steps:

  • Bring large pot of salted water to a boil over high heat. Cook pasta according to package directions.
  • In a large deep skillet over medium-high heat, add olive oil. Add onion, garlic, Italian seasoning mix and red pepper flakes, if using. Sir frequently and cook until the onions are soft and fragrant, about 3 to 4 minutes. Add sausage and cook for 1 minute. Add can of crushed tomatoes, stirring all the ingredients together to combine. Season with kosher salt and freshly ground black pepper, to taste and let simmer for 10 minutes. Stir in heavy cream and mix well.
  • Drain the pasta and add directly to the skillet with the sauce Toss the pasta to coat with the sauce. Transfer to a serving bowl or platter and garnish with basil leaves. Serve with the cheesy garlic bread.
  • For the cheesy garlic bread:
  • Preheat oven to 400 degrees F.
  • Sprinkle cheese and Italian seasoning over garlic bread half. Place on tinfoil lined baking sheet and cook in the oven for 10 to 12 minutes, until the cheese is melted and bread is warmed through. Slice and serve.
  • Use the leftover garlic bread from this recipe to make Garlic Bread Pizza.

CHEESY PASTA WITH TOMATO BUTTER BEAN SAUCE

I made this tonight for dinner and fell in love. Please used the stewed tomatoes! Lately I have been using shallots in the place of onions because I have a ton of them. Sorry for the weird amount on the butter beans; I use about 3/4 of a 15 oz can. If you want it a little more like a marinara try adding some tomato paste. Celery would also be good in the sauce. I like to serve this in bowls with about 1/2 pasta 1/2 sauce in them, so you may need to adjust pasta and mushrooms for what you like. Be careful as to how much cheese you use too! Hope you enjoy as much as I did!

Cheesy Pasta With Tomato Butter Bean Sauce image

Steps:

  • Caramelize onions/shallots and garlic in pan.
  • As they caramelize mash in food processor (or with knife) butter beans until you have about 1/2 cup bean paste. Do not smash all of the beans, only enough to get the 1/2 cup!
  • Add bean paste, tomatoes, fennel, and as much of the remaining butter beans as you like to onions.
  • Add salt, pepper, basil, oregano, parsley, pepper flakes, and water.
  • Let sauce boil cook on med heat until desired thickness (about 20 minutes).
  • Cook penne in salted water.
  • While penne cooks saute mushrooms in saucepan.
  • When both mushrooms and penne are cooked, drain penne and add pasta, milk, pepper, garlic powder and cheese to saucepan with the mushrooms.
  • Cook until cheese is melted.
  • Dish pasta mixture into bowls and serve with sauce over it.

  • Cook penne until done; rinse and drain.
  • Meanwhile, brown ground beef in large skillet; remove from pan and drain. In same skillet, sauté garlic (and mush rooms) in olive oil. Return meat to skillet with mush rooms over low heat; add tomato sauce, pepper, and basil.
