Spicy Shrimp & Peppers with Pasta image

Steps:

  • In a large nonstick skillet coated with cooking spray, saute the mushrooms, peppers and shallot in oil until tender. Add garlic and pepper flakes; cook 1 minute longer., Stir in the tomatoes, Italian seasoning and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until vegetables are tender., Meanwhile, cook linguine according to package directions. Add shrimp to sauce; cook and stir for 5-7 minutes or until shrimp turn pink., Drain linguine; stir into sauce. Heat through. Sprinkle with parsley.

LINGUINE WITH SAUTéED SHRIMP, TOMATOES AND PEPPERS

Here's a weeknight classic from Pierre Franey's "60 Minute Gourmet" column that was published in 1991. The recipe may be close to 30 years old, but its flavors and ease of preparation are timeless. First, a quick sauce is made of chopped garlic, red and green bell peppers, canned tomatoes and oregano. As that simmers away, the linguine is dropped into briskly boiling water and cooked for about nine minutes. While the pasta is cooking, the shrimp is sautéed with a pinch of crushed red pepper flakes in a little olive oil until it just turns pink. When the shrimp is cooked through, it's combined with the sauce and a handful of chopped fresh basil or Italian flat-leaf parsley then tossed with the linguine.

Linguine With Sautéed Shrimp, Tomatoes and Peppers image

Steps:

  • Peel and devein shrimp.
  • Bring water with salt to a boil in a large kettle.
  • Heat 2 tablespoons of the oil in a large saucepan over medium-high heat and add the garlic and red and green peppers. Cook briefly without browning. Add the tomatoes, salt, pepper and oregano. Bring to a simmer and cook, stirring, 10 minutes.
  • Meanwhile, drop linguine into boiling water and cook about 9 minutes or until it reaches a degree of doneness. Drain quickly and reserve about 1/2 cup of the cooking liquid.
  • While linguine cooks, heat remaining oil in a saucepan over medium-high heat. Add shrimp, pepper flakes, salt and pepper. Cook, stirring, about a minute. Add to tomato sauce.
  • Add linguine, reserved cooking liquid and the basil to mixture. Heat thoroughly. Toss well and serve immediately.

Steps:

  • In a pan just wide enough to hold the pasta, place enough water to fill the pan 1 inch from the bottom. Season the water with a pinch of salt and bring to a boil. Spread the pasta in the pan and cook over medium-high heat, stirring occasionally to prevent the pasta from sticking together. Allow the pasta water to reduce; do not add more, as you want the starchy water to be minimal when the remaining ingredients are added.
  • Meanwhile, add the coarse black pepper to a separate small pan over medium heat. Toast a minute or two until fragrant.
  • Once the pasta is al dente and the pasta water has reduced so only a slight coating remains at the bottom of the pan, turn off the heat and add the toasted ground black pepper and Pecorino-Romano. Stir and toss vigorously until both ingredients are well incorporated into the pasta. Toss in the olive oil and season with salt.
  • Transfer the pasta to a large bowl and garnish with more black pepper, Pecorino-Romano and extra-virgin olive oil.

Steps:

  • 1. Fist boil the water for your pasta, along with the olive oil and sea salt. Once you pasta is boiling add in your linguine.
  • 2. Cut up and dice bell peppers and sit to the side.In another pan, add a half stick of butter and add in the garlic salt, paprika and onion powder on top of the butter. Let melt. Add in the peppers and let cook for about 3 minutes, then add in the shrimp and let cook for 5 minutes (on high heat)
  • 3. Once the shrimp have cooked, slowly stir in the heavy cream and continue to stir on high heat for 3 to 4 minutes. Turn down heat immediately after. Once the shrimp mixture is done add pasta into the shrimp sauce and toss to coat the pasta. Sprinkle Parmesan cheese on top (optional)

2 Tbsp olive oil

SAUCE
1/2 stick butter
3 dash(es) garlic salt
3 dash(es) onion powder

1/2 yellow bell pepper (sliced and diced)

SHRIMP, FETA, AND ESPELETTE PEPPER PASTA

My best French friend Cecile introduced me to Espelette pepper powder and I can't get enough of it! It's a red pepper powder from French commune of Espelette that is mildly spicy and full of flavor. This pasta dish combines Espelette pepper with shrimp and feta and the three ingredients work together beautifully. I like to call this dish Les Pates de Cecile (Cecile's Pasta). For additional flavor and a nice presentation, you can crumble some additional feta over each serving and drizzle with extra-virgin olive oil.

Shrimp, Feta, and Espelette Pepper Pasta image

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain well.
  • Meanwhile, heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 2 minutes. Add frozen shrimp and Espelette pepper and lower heat to medium-low. Cook until shrimp is no longer frozen, 3 to 5 minutes.
  • Add drained spaghetti to the skillet along with feta cheese. Increase heat to medium-high. Toss to coat spaghetti in the mixture until feta has melted and become a sauce. Remove from the heat and toss in parsley, mint, and chives until incorporated. Divide between 2 plates.

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes.
