Don't let the simplicity of this recipe fool you. Served with a salad and a fast side dish, these pork chops are perfect for a busy weeknight, and my children love it.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Sprinkle chops on all sides with thyme, salt, and pepper. Place on a baking sheet.
- Bake in the preheated oven until a meat thermometer inserted into the thickest part of a pork chop reads 165 degrees F (74 degrees C), about 20 minutes. Tent aluminum foil over the chops and let rest 5 to 10 minutes before serving.

PAN FRIED PORK CHOPS

- Salt and pepper both sides of the pork chops.
- Combine the flour and some cayenne, salt and black pepper. Dredge each side of the pork chops in the flour mixture, and then set aside on a plate.
- Heat the canola oil over medium to medium-high heat. Add the butter. When the butter is melted and the butter/oil mixture is hot, cook 3 pork chops at a time, 2 to 3 minutes on the first side. Flip and cook until the chops are golden brown on the other side, 1 to 2 minutes (make sure no pink juices remain). Remove to a plate and repeat with the remaining pork chops.
- Delicious and simple! Serve with smashed new potatoes.

This is my favorite recipe for chops on a long day after work! They are quick, simple, and easy to make, and turn out like you slaved for hours. - Mix flour, seasoned salt, and pepper thoroughly in a wide bowl.

- Preheat oven to 450°F. For later in this recipe, place a cooling rack over a large dish or pan. In a large cast iron pan, or other oven-proof sauté pan (do not use a non-stick skillet), heat the oil over medium-high heat until hot. Place the two chops in the pan, not touching each other, and let them cook-leaving them alone for three minutes. Turn and cook untouched for two more minutes. Then keep flipping every two minutes for about 10-12 minutes or until golden brown. Remove the pan from the flame and insert a probe thermometer horizontally into the thickest part of one of the chops and set the probe to alarm at 135 degrees. Place the pan with the pork chops in the pre-heated oven and turn the chops every two minutes for about 14-15 minutes or until they reach 135 degrees. (They will cook further after you take them out of the oven so don't leave them in the oven past 135 degrees. The internal temperature will rise to 145 degrees which is the USDA's minimum recommended temperature for cooked pork.) Remove the pan from the oven and set chops temporarily on the prepared rack. Drain off oil from the pan and discard. Place the pan on stove top over medium heat and add butter, garlic and thyme. Cook for two minutes, scraping up any brown bits, then add the chops back to the pan and baste continually; flipping the chops two or three times to fully coat with butter sauce, about two to three minutes. Turn off the heat. When ready to serve, place the chop on a cutting board vertically and with a long knife, slice down between the two bones. When you get to the connecting bone, snap it or cut it off. This will give you two portions of equal size for each chop for a total of four servings. Serve the pork chop with a little of the browned butter sauce.
PERFECT FRIED PORK CHOPS
My fried pork chop recipe :) I came up with this after trying many recipes & not really finding the flavor I wanted for my pork chops. I will sometimes skip soaking as I don't always have time. Choose soak time wisely, as the longer they soak the harder it is to keep the breading from falling off due to excess moisture absorbed in the soaking process. I suggest boneless tho as they are easier to tenderize & will require less soak time to keep juicy. Bone in will take longer, but still work with this recipe. Parsley is optional, some people find that it burns too easily so you can omit & the flavor will not change much at all. I personally love this recipe with a side of Louisiana hot sauce for dipping, I find it compliments the flavor perfectly.

- Mix milk with first amount of salt (2 teaspoons) and allow pork chops to soak in this mixture for as long as you'd like, about an hour to maybe four works well. Overnight soaking will result in too much moisture & your breading will fall off.
- Remove pork chops from brine, and set aside. Brine should be discarded.
- Mix all spices in with flour.
- Heat oil in pan.
- Coat each side of the pork chops, applying pressure to make the batter stay on during cooking. One coat is good for a thin layer of batter. For a thicker coating, dip them in a separate bowl of a little milk with an egg mixed well, and again in the flour.
- Make sure oil is hot. You can check by dropping a pinch of flour in, and it will sizzle if it is. Oil temperature should be around 375 degrees F, if you have an oil thermometer.
- Cook on each side 4-6 minutes on each side, or until meat is no longer pink inside. Chops with bones will take a bit longer, and we cook them on one side until blood starts to come out of the bone before flipping. If you have a meat thermometer, the inner temperature should be at least 160 degrees F.
PERFECT SMOKED PORK CHOPS
You'd pay $30 for one of these in an upscale chop/steakhouse...you can charge your friends a little less if you want!

- Start your work at least 8 hours before you want to eat.
- Brine the meat. In a bowl or pot large enough to hold chops and 1 gallon of water, combine brine ingredients. Start with 2 cups of hot water to dissolve salt and sugar. After salt & sugar are completely dissolved, add more cold water and some ice to bring volume to 1 gallon. Make sure the brine solution is cold and add chops -- they should be completely submerged. Cover and refrigerate for 6-8 hours.
- Smoke the chops. Smoking methods can vary. I use a barrel-smoker with an external firebox. Other methods will work, but be sure your temperature stays in the range of 175-200 F and never expose the chops to direct heat . When fire/smoke is ready, remove pork from brine and pat dry with paper towel. Place in smoker. Use hickory, mesquite or apple wood (or combinations), smoke for 1 hour. At this point, the chops can be cooked or reserved in refrigerator for several hours.
- Cook the chops. Just before cooking, apply about 1 tablespoon of the rub to both sides. Grill on direct heat. This will take about 30 minutes. Be prepared to move the chops to indirect heat for a while of they are getting too brown prior to being done. Cook to an internal temperature of 140°F Remove from grill and rest 5 minutes before serving. Meat will be pink and very juicy -- don't worry about the pink! As long as you achieve a temperature of 140 in the thickest part of the chop, it's safe to eat (the trichinosis bug dies at 137 F). If you prefer a more well-done chop, cook to 150 before removing from heat.
- But, in my opinion, at that temperature, you've just wasted a day's work.
PERFECT FRIED PORK CHOPS RECIPE

- Rinse pork chops and pat dry with paper towels, making sure to remove all excess moisture.
- In a medium bowl, combine flour, seasoned salt, black pepper, steak seasoning, and salt to taste.
- Dip each side of the pork chops into the seasoning mixture, then set aside on a plate.
- Heat canola oil over medium-high heat in a large skillet and once it is hot (between 325-375 degrees F), add butter to the skillet.
- When the butter is melted, cook pork chops 2 to 3 minutes on the first side; 1 to 2 minutes on the other side.
- Dispose of the excess oil.
- Remove fried pork chop to a plate and repeat with remaining porch chops.
- Store them in an airtight container to eat them as leftovers on busy weeknights.
