Steps:
- For the chocolate crust: Pulse the flour, cocoa powder, confectioners' sugar, oil and salt in a food processor until the texture of fine meal. Add the butter and pulse until pea-size pieces form. Sprinkle in 2 tablespoons ice water and pulse until the dough begins to come together. If the dough doesn't hold together, add up to 2 more tablespoons ice water, 1 tablespoon at a time, and pulse again.
- Transfer the dough to a sheet of plastic wrap and pat into a disk. Wrap tightly and refrigerate until firm, at least 2 hours and up to overnight.
- Roll out the dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Fold the overhanging dough under itself and crimp the edges with your fingers. Freeze 20 minutes.
- Meanwhile, preheat the oven to 350 degrees F and coat a sheet of aluminum foil with nonstick spray.
- Pierce the bottom of the chilled dough all over with a fork. Line the dough with the foil, sprayed-side down, and fill with pie weights or dried beans. Bake until the edges are set, about 20 minutes. Remove the foil and weights and continue baking until the crust is no longer glossy on the bottom, 5 to 10 minutes. Transfer to a rack and let cool completely.
- Add the chocolate and coconut oil to a medium microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until the mixture is melted and smooth, about 1 minute. Paint a thin layer of chocolate all over the bottom and sides of the crust. Let set at room temperature until the chocolate is hardened, about 15 minutes.
- For the filling: Put 1 1/2 cups water in a medium saucepan and sprinkle over the gelatin. Let sit until the gelatin is absorbed, 2 to 3 minutes. Add the granulated sugar and heat over medium heat, whisking occasionally, just until the gelatin and sugar are dissolved, 3 to 4 minutes. Remove from the heat and whisk in the peppermint extract.
- Pour the gelatin mixture into a large bowl and stir in 2 cups cold water. Use a spoon to scoop away any bubbles at the surface. Refrigerate, stirring every 10 minutes, until the gelatin just begins to thicken and is the consistency of thin fruit jelly, 30 to 45 minutes.
- Pour the gelatin mixture into the crust and refrigerate until set, at least 4 hours and up to overnight.
- For the meringue: Bring a few inches of water to a boil in a saucepan that can hold a heatproof stand mixer's bowl above the water.
- Add the granulated sugar, lemon juice, salt and egg whites to the mixing bowl and whisk together by hand. Set the bowl above the boiling water and whisk until the mixture is warm to the touch and the sugar is completely dissolved (about 150 degrees F).
- Transfer to the stand mixer fitted with the whisk attachment, add the peppermint extract and beat on medium-high speed until the mixture is cool and the whites hold stiff peaks, about 5 minutes.
- To assemble: Arrange the crushed peppermints around the edge of the pie. Cut into slices and top each with meringue, chocolate curls and more crushed peppermint.

Steps:
- Put the sugar, 1/4 cup water and the corn syrup into a small saucepan and stir until the sugar is dissolved. Bring the mixture to a boil over medium heat and cook, without stirring, until the syrup registers 240 degrees F (soft-ball stage) on a candy thermometer, about 5 minutes.
- Meanwhile, while the sugar is cooking, put the egg whites in the bowl of a stand mixer fitted with a whisk attachment and whip on medium-low speed until foamy, about 1 minute. Sprinkle in the cream of tartar and increase the mixer speed to medium; whisk until soft peaks form, about 3 minutes.
- When the syrup reaches the correct temperature, reduce the mixer speed to low and slowly drizzle the hot syrup down the inside of the mixer bowl in a slow, steady stream (be sure not to let the syrup hit the whisk to avoid splattering). Increase the mixer speed to high and whip until the whites are stiff and glossy, about 4 minutes.
- Use the meringue immediately to top a lemon meringue pie.
PERSIMMON MERINGUE PIE
Persimmons are a valued and prized fruit, especially true for those who enjoy persimmon baked pudding, an early European-American dish which is likened to pumpkin pie or plum pudding in texture. Some autumn and winter meals are not the same without dessert made from persimmons. This red/orange fruit is best harvested after the first frost. From the Western chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

SPICY PERSIMMON PIE
This is a recipe I came up with when I had leftover persimmon pulp. It is a spicy pumpkin-like pie and is very good. Serve warm or cold with whipped cream if desired. Store leftovers in the refrigerator.

WORLD'S BEST LEMON MERINGUE PIE
I grew up amid the citrus groves of Southern California in the '50s. On summer afternoons we kids would take a nap in the lemon grove, sun warming us, bees buzzing overhead. This pie tastes like my dreams there!

MAUDIE'S PERSIMMON PIE
I am 59 years old, and this recipe was an original from the personal collection of my Grandma's dear friend Maudie, an elderly housewife who lived on an Indiana farm that was blessed with an abundance of persimmon trees. The recipe was created during the time of the Great Depression, so it is very old. As Grandma always said, 'You did with what you had.'

MY MOM'S LEMON MERINGUE PIE
This is my mother's lemon meringue pie recipe and it is one of my all time favorite desserts. You can add a bit more lemon zest if you want it to be more tart! Don't let pie cool before putting on meringue.

- Persimmon Bread. This sweet and perfectly spiced persimmon bread is similar in texture and appearance to banana nut bread, but instead of over-ripe bananas, you’ll use over-ripe persimmons.
- Persimmon Cookies. Persimmon cookies are some of my favorite cookies to make for fall and winter parties. They taste incredible and are pretty and festive, thanks to the glaze.
- Persimmon Risotto With Pancetta and Goat Cheese. If you’re looking for a more savory option, try persimmon risotto instead. It’s rich and filling, and you can make it in less than 30 minutes.
- Persimmon Jam. With all the fruit canning and jelly- and jam-making people do throughout the year, I’m not sure why more people don’t think of making persimmon jam.
- Easy Spiced Persimmon Muffins. These insanely good muffins are, in fact, the very muffins that turned me onto cooking with persimmons in the first place.
- Easy Persimmon Crumble Pie. You can have this scrumptious crumble pie ready for the oven in only 5 minutes, and you’ll only need nine ingredients to do it.
- Persimmon Pudding. Persimmon pudding is more like bread pudding than a pudding cup, and it tastes amazing. It has a unique flavor with hints of honey (from the persimmons), fruit, vanilla, and cinnamon.
- Crockpot Persimmon Applesauce. If you love trying the different applesauce variations from Motts, you must make your own persimmon applesauce. You’ll only need five ingredients – apples, persimmons, lemon juice, vanilla extract, and water – and it takes about 10 minutes to prepare it for the Crockpot.
- Autumn Salad With Persimmons and Apples. Desserts and bakery items are where persimmons shine. However, I’d be remiss if I left this absolutely stunning salad off my list of favorites.
- Cardamom and Persimmon Cobbler. If you have family from the south – or have spent any amount of time there – then you know the southern dessert of choice is a cobbler.
