Steps:
- Make the aioli and begin marinating the tuna early in the day. Microwave the lemon and lime in a small bowl to release the essential oils and set aside just long enough to be able to handle. Meanwhile, through the feed tube of a running blender, add 1 at a time, the egg yolks, dry mustard, salt, and white pepper. By this time, the micro-waved lemon and lime should be cool enough to handle. Leaving the blender running, squeeze the juice from half of 1 lemon through the feed opening, then add the oil in a slow stream. Remove to a bowl and refrigerate.
- Season the tuna steaks with salt and pepper, place them in a nonreactive container and squeeze the rest of the lemon and the lime over them. Cover and refrigerate for 2 hours.
- Heat the grill or preheat the broiler in the oven. Brush the marinated tuna with 1 tablespoon or so of olive oil. Cook until browned, until fish flakes with a fork, 3 to 6 minutes per side, and then let rest. Leave grill hot or oven on to toast bread.
- Brush olive oil (about 1 tablespoon per half) on Italian bread and toast lightly, either on the grill or under broiler.
- Flake the tuna, place in a bowl with scallions and fennel and fold in the aioli. Spoon tuna mixture onto the toasted Italian bread, drizzle a small amount of balsamic vinegar over, and top with Cheddar. Heat briefly in the oven to melt cheese. Garnish with fresh dill. This is great served with fresh tomato soup, if desired.

Steps:
- Preheat grill to 400 degrees F.
- Wash and pat dry the tuna steaks. Season with salt and pepper and brush both sides with olive oil. Place tuna on hot grill and sear each side for 2 minutes for rare. If you prefer well done, cook the tuna an additional 2 to 3 minutes per side. Remove from skillet and let it rest.
- Into the bowl of a food processor, add the garlic, basil leaves, pine nuts, salt, and pepper. Pulse until finely chopped. With the blender still running, slowly pour 1/2 cup of olive oil. Check for a thick, yet smooth consistency, adding more oil if necessary. Transfer to a bowl and stir in 1/2 cup Parmesan.
- Slice the tuna across the grain and on a bias into 1/2-inch thick slices. Place the slices on a serving plate and drizzle with lemon juice. Sauce tuna with pesto.

HEALTHY TUNA MELTS
Quick and easy to make for lunch or dinner! My husband asked me to make him a tuna melt. I'd never eaten one (I don't like tuna except for grilled tuna steaks), let alone made one, so I tried this recipe from The Complete Cooking Light Cookbook. I've made this for him a few times now, and he says they're good! He's not big on English muffins so we normally use whole wheat toast instead.

PESTO TUNA
I had tuna, but none of the usual ingredients I mix in. I found pesto in the back of the fridge. It's unusual I know, but we really liked the flavour combination, even my husband who hates trying new things :-) Note: the cook time is for refrigeration.

Steps:
- Make sure the tuna is as well drained as possible, I squeeze mine in a sieve.
- Mix with pesto and pepper to taste.
- If you want a more"spreadable" consistency, mix in the mayonnaise.
- A little lemon juice adds some zing if you like a more tangy flavour.
- Refrigerate for at least 20minutes to allow flavours to meld.
- Serve either as a sandwich or on crackers.
BEST TUNA MELTS EVER
This tuna melt recipe is made from my tuna salad recipe. It is lower in fat and absolutely delicious. The key is to toast the bread first! (And the spices help). It is my own creation, and I do not usually use a recipe - I am sharing this with you now, in hopes that you'll love it as much as my friends & I do! YUM! NOTE: You can use premium tuna or not - I usually use the cheaper stuff for the tuna melts & save the Albacore for the pasta salads.

Steps:
- Preheat oven to 400°F.
- In a small bowl, add the mayo, mustard, salt, pepper & spice. Mix with a fork.
- Finely dice the onion & dill pickle, and add to the bowl.
- Add the tuna, well drained, to the mixture.
- With a fork, mix well, ensuring the tuna is saturated with mayo & mustard, and the pickles & onion are evenly distributed. Adjust spice as necessary.
- Slice the tomato into very thin slices, removing seeds. Place slices on a paper towel to absorb moisture (you don't want soggy bread).
- Toast bread, slightly lighter than you prefer.
- Divide tuna salad mixture in half, and scoop on top of the toast. Spread the mixture evenly.
- Place tomato slices on top of tuna mixture.
- Sprinkle grated cheese on to toast.
- Place toast onto a cookie sheet.
- Bake for 5 - 10 minutes, until cheese is bubbly.
- Enjoy!

TUNA MELTS
This is a very quick and tasty way to turn simple can of tuna fish into a warm meal for dinner, lunch, or snack. I like to have a kosher pickle (or Claussen pickle) to crunch on with these tuna melts.
