PHO SOUP
Steps:
- For the base: Preheat the oven to 350 degrees F.
- In a roasting pan, combine the mushrooms, celery, carrots, onions, ginger, lemongrass and canola oil. Bake for 25 minutes.
- Remove from the oven, transfer into a large pot and add 1 gallon of cool water. Bring to a simmer, then add the cilantro, basil and jalapenos and simmer for 20 minutes. Strain and stir in the sambal, soy sauce, sesame oil, and salt to taste.
- For the spicy vinaigrette: Whisk together all the vinaigrette ingredients.
- Toss the desired medley of vegetables with spicy vinaigrette and serve on top of each soup bowl with noodles. Garnish with a fresh piece of lime.
PHO GA (VIETNAMESE CHICKEN NOODLE SOUP)
This dish is not complicated to make. Stir some chicken and spices together and simmer. Finish with a squeeze of lime and nam pla and you have soup to die for.

- In a large pot, place chicken wings, garlic, ginger, lemongrass, kaffir lime leaves and galangal root in 1 liter of water. Bring to a boil over high heat.
- Reduce heat to low and simmer for 30 minutes, occasionally removing foam that floats to surface of broth.
- Shred lettuce into bite sized pieces. Cut tomato into small wedges. Remove root ends of bean sprouts.
- Soak pho noodles according to package directions.
- When soup has simmer 30 minutes, stir in the nam pla and lime juice. Season with salt and black pepper.
- Separate noodles into two bowls, pulling gently apart. Top both bowls with bean sprouts and lettuce.
- Ladle broth into each bowl and garnish with tomato slices and cilantro.

This is from a Vietnamese cookbook, lent to me by a friend. The ginger makes for a spicy, flavourful broth.

Steps:
- Make the broth by bringing the stock to a boil.
- Add the ginger, cinnamon, coriander seeds and star anise.
- Simmer for 15 minutes, then add the sugar, salt, pepper and fish sauce.
- Strain the broth and return to the pan, keeping hot over a low heat.
- Boil a pan of water and cook the noodles until al dente.
- When you put the noodles in the water, put the beef in the hot broth to cook. You don't need to boil it. The beef will cook just from the heat of the broth because it is so thinly sliced.
- Drain and divide the noodles among individual bowls.
- Add a handful of beansprouts, some shallots and coriander.
- Ladle the hot broth and beef over.
- At the table, each person can add the hoisin sauce, chilli sauce, lime juice, fresh chilli and basil to taste.

FAUX CHICKEN AND SHRIMP PHO
This is my quick version of chicken pho, which is a fragrant, hearty Vietnamese inspired soup that can be eaten any time of the year. The broth is made fragrant with spices, ginger, garlic and veggies, which you can choose to keep, or toss. The spices/ginger/garlic can be contained in cheesecloth, or a tea infuser. This can be made low carb by omitting the noodles.

- Bring large pot of water to boil, then remove from heat.
- Add noodles to the pot; let stand until tender, about 15 minutes, then drain and set aside in a large serving bowl.
- Combine chicken broth, onion slices, fish sauce, sliced baby carrots and chicken in a soup pot; bring to a simmer.
- In a cheesecloth or tea infuser, add the whole cloves, sliced ginger, garlic, star anise and place in the soup pot with the chicken.
- Simmer the chicken, vegetables and spice mixture for about 30 minutes, until chicken is tender and cooked through.
- Remove chicken and cool it until you can cut into cubes; place back into the simmering soup pot.
- Remove the cheesecloth or tea infuser, discard ingredients inside.
- Add bean sprouts and shrimp and simmer for about 5 more minutes.
- Ladle the soup into the large serving bowl with the noodles.
- Add the green onions, cilantro and mint leaves to the serving bowl.
- Serve with fresh lime wedges.
