PICANTE ROAST BEEF SANDWICH WITH GARLIC, LIME AND GREEN CHILE

Picante Roast Beef Sandwich with Garlic, Lime and Green Chile image

Steps:

  • Heat oil in a large skillet over medium heat. Add onion and garlic and saute 3 minutes, until soft. Add roast beef slices and saute 3 to 5 minutes, until browned on all sides, stirring frequently. Add tomatoes, jalapenos, lime juice, and cumin and stir to combine. Bring to a simmer and cook 5 minutes, to heat through and reduce slightly.
  • Remove from heat and stir in cilantro. Season, to taste, with salt and black pepper. Spoon onto sliced rolls with plenty of sauce and serve.

2 teaspoons olive oil
1/2 cup diced onions
2 to 3 cloves garlic, minced
12 ounces sliced roast beef, sliced into strips
1 (14-ounce) can diced tomatoes
1 (4-ounce) can minced green chiles
2 tablespoons fresh lime juice

2 tablespoons chopped fresh cilantro leaves

4 sandwich rolls, sliced in 1/2

Steps:

  • Season the steak with salt, pepper, and cumin.
  • Heat 1 tablespoon of canola oil in a medium pot over medium-high heat. Add the steak and cook until browned, about 5-6 minutes. Remove the steak from the pot and set aside.
  • Add the remaining tablespoon of oil to the pot, then add the onion and sauté until translucent, about 5-6 minutes. Add the garlic and ají amarillo, and sauté for 3 minutes, until fragrant.
  • Return the steak to the pot, then add the water and bouillon. Mix to dissolve the bouillon powder.
  • Add the potatoes and carrots. Bring the stew to a simmer, cover, and cook for 10 minutes, or until the potato and carrot are cooked through.
  • Add the peas and Peruvian corn. Cook for another 5 minutes, or until the peas and corn are cooked through.
  • Serve the picante de carne with rice and sunny-side up eggs. Sprinkle chopped parsley on top.
  • Enjoy!

MINI GOLDEN BEEF POCKETS

You know those handheld pizza pockets you can find in the freezer section of the grocery store? Well they were one of my favorite after-school snacks growing up so I've made my own version-a mashup of those pockets combined with another favorite of mine: Jamaican beef patties.

Mini Golden Beef Pockets image

Steps:

  • For the filling: Preheat the oven 400 degrees F. Line two baking sheets with parchment paper.
  • Heat the oil in a large skillet over medium-high heat. Add the beef, onion and garlic and cook until the beef is browned and crumbly, about 10 minutes. Stir in the ketchup, all-purpose seasoning, browning sauce, jerk seasoning, allspice, ginger, soy sauce, thyme, green onions and tomato. Cook until the mixture is bubbly and heated through, about 2 minutes. Season with salt and pepper. Set aside to cool.
  • For the dough: Unroll the dough and trim the edges to create a rectangle. Cut each pie dough into four even pieces. Place half of the rectangles on the prepared baking sheets. Spoon the filling evenly into the center of each rectangle. Brush the edges with water and place the remaining rectangles on top. Crimp the edges with a fork. Cut slits in the tops of the pockets to allow steam to escape. Bake until the dough begins to brown and crisp around the edges, about 10 minutes.
  • Meanwhile, mix the butter and turmeric in a bowl until combined. Brush the pockets with the turmeric butter. Bake until done, another 5 minutes.

  • 2. Add chili powder, tomato sauce, salt and olives.

Steps:

  • Heat oven to 375. In lg skillet, over med-high heat, brown ground turkey or ground beef. If using ground beef, drain of any fat. Stir in picante sauce, heat to a boil. Reduce heat to low, cook 5 mins.
  • Remove pan from heat, let cool. In small bowl, beat egg and water. On lightly floured surface, unroll 1 pkg pizza dough. Roll dough into a rectangle. Cut dough into 4 equal size rectangles. Spoon 1/3 ground turkey or beef lengthwise down center of each rectangle.
  • Sprinkle w/ 2 tbsp cheese. Brush pockets w/ egg wash. Sprinkle tops of each pocket w/ 1 tbsp cheese. Repeat w/ 2nd pizza dough. Place pockets on a baking sheet. Bake 20 mins, or until golden brown. Sreve w/ extra picante sauce or sour cream.

  • Cut roast in half; place in a 5-qt. slow cooker. In a large bowl, combine the picante sauce, tomato sauce and taco seasoning; pour over roast. Cover and cook on low for 8-9 hours or until meat is tender. , Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer 3 cups to a small saucepan. Bring liquid to a boil.
